Holiday Chicken Salad

I love making and serving this--it's deliciously healthy! I usually leave out the green pepper and add halved grapes and chopped apple (sometimes I'll throw in a little red pepper, because it compliments the fruit better). I use slivered almonds because my hubby doesn't care for pecans, and usually only about 1/2 teaspoon of paprika because I don't like the pink look it gives the salad; I prefer a whitish salad. Serve in pita pockets stuffed with fresh spinach leaves and a fruit smoothie--a wonderfully healthy summer meal!

Pumpkin Spice Cupcakes

Since there were many reviewers at odds about whether to use oil or butter, I did half oil, half butter. I added extra pumpkin also, and baked at 350 for about 18 minutes. They turned out full of flavor, delicious AND moist. Didn't have any allspice, but I didn't miss it at all. I only wish the frosting held its shape better.

Creamy Rice Pudding

I've made this recipe multiple times--even tripled it once (which is no problem). The only thing I change is to omit the raisins, although I compensate by adding cinnamon, raspberries, bananas, or blackberries when I serve it. Like other reviewers say, let the pudding cool a bit before adding the egg, or it will cook. This is a great way to please your sweet tooth without all the fat!

Breaded Toasted Ravioli

I love Italian food, and was anxious to try this. It's kind of a lot of work, and the result was too dry for my tastes. The seasonings didn't add all that much flavor either.

Giant Chocolate Chip Cookie

I've made this twice, and the trick it to make sure the dough is thick around the outer ridge of the pan so that it bakes evenly, or else the cookies will thin out around the edges as it cooks. The cookie tasted delicious (even after several days!)--I made it as a welcome home treat for my daughter and kept it under a cake serving glass.

Chicken Chimichangas with Green Sauce

These turned out great! They're kind of a lot of work, but worth it when you have the time. I baked mine on 450 after brushing with oil. Serve with lettuce and sour cream.

Fluffy French Toast

L-o-o-o-v-e this recipe! I like the fact that it uses less eggs than traditional french toast recipes. I add a little more cinnamon to the mixture about halfway through in order to keep the rest of the pieces cinnamon-y, but other than that, don't change a thing!

Restaurant-Style Potato Salad

This is the first potato salad I've ever made and it turned out delish! Changed a few things to suit my personal taste: First, cut the potatoes into squares before boiling them; it only took about 7 - 8 minutes until they were done. I think this makes them cook more evenly. Second, I left out the pickles and onions, but added some hard-boiled eggs. Used regular vinegar instead of white wine, since that's what I had. I also used light mayo to save some calories - can't tell any difference anyway and since I didn't have time to chill it, I served it room temperature, but still it tasted great! I may try adding olives next time. Thanks for the great salad!

Slow Cooker Chicken and Dumplings

The ultimate comfort food! I make this recipe exactly as called for, except I cut the chicken into smaller pieces, cut the biscuits in half before I put them in, and always add some corn at the same time. Serve with mashed potatoes.

Ham and Cheese Bowties

I've made this dish several times, and love it! Make it exactly as the recipe says, except I use the pre-cooked, cubed ham they sell in grocery stores. I usually serve this with crescent rolls and steamed vegis. Great as leftovers too!
