This soup was wonderful. I tweaked it a little. I used 1 squash, quartered and roasted for 45 min at 350. Then I cooled it, skined and chopped it. Added it to a pan with about 2 1/2 cup chicken broth, 4 T butter, 1/2 t pepper, 1/4 t nutmeg, 1/8 t cayenne, and dash salt. I also added half of a diced granny smith apple. I let that all cook for a while, then used the potato masher, and let it cook a while more. I cooled it then pureed it in the blender. Back to the stove, added maybe 1/2 c cream and heated back up. YUMMY!! Even DH who swears he hates squash said he would eat again.
