Salsa Chicken Burrito Filling

Excellent! I left out the taco seasoning per others suggestions. Put all other ingredients in crock on high for 4 hours. Rolled in flour tortillas with black beans and cheese. I poured the remaining sauce on top and sprinkled more cheese on top. Baked at 375 for 15 minutes. Wonderful, flavrful dish.

Brown Sugar Meatloaf

Great meatloaf! Used breadcrumbs instead of crackers, and put the ketchup mixture on top the last 15 minutes of cooking. Thanks! I loved this even better the next day.

Chicken Spaghetti II

Not very pretty but excellent flavor! I used half the cheese and added the pasta once the cheese was melted. Very picky husbad was skeptical, but loved it. It was even better the next day. The rotel gives it a nice kick. Not a healthy dish but good once in a while. Thanks!

Basil Chicken over Angel Hair

This recipe is awesome. My husband (who is not much of a cook) made it last night and it it was wonderful. He marinated the chicken in balsamic vinegrette for about 1/2 hour, then cooked it with the garlic (left out the onions for me). Added double the fresh basil, a bit of cayenne pepper, and a couple splashes of EVOO. Threw in 2 containers of halved grape tomatoes just before serving. Served over thin spaghetti. I think the vinegrette gave it a nice bite. This will go into our regular rotation! Thanks for a great recipe.

Joy's Prizewinning Trifle

Wow! I made this for Easter and it was a hit! I thought my brother in law was going to lick the bowl! The only change I made was to mix the pudding with 1 c. milk before adding the sour cream. Once that was mixed well, I folded in the cool whip. We could have just eaten the 'fluff'! It was so good! Thanks for the tip of soaking the bananas in the pineappe juice. I couldn't believe they did not turn brown. This was a spectacular dessert. I can't wait to try it again with blueberries and raspberries!

Alfredo Sauce

Excellent sauce. My DH is pretty picky when it comes to alfredo sauce, and I had not found one that he liked. He told me I had outdone myself with this one. I used half and half to try to lighten it a bit. I also used an italian 3 cheese blend. You have to stir and stir; it will melt! I was concerned at first because it seemed thin. However, I pured it over the pasta and let it sit for just a couple of minutes before serving. It was perfect! Thanks for a great sauce. We can't wait to try it on chicken.

Chinese Cabbage Salad I

This was great! I used 2 packages of noodles, and only about 6 oz of cashews (all I had). Didn't change anything else. I took it to a Christmas party and there was none left over! I waited until we were ready to eat before I poured the dressing on, and then tossed to coat. I can't wait to make this again.

Pumpkin Cookies V

These cookies are great! Very soft and flavorful. I did not love the glaze though. I couldn't get the consistency right, and it just ran all over the place. I will be looking for a different topping for these the next time I make them. This does make a TON, so beware.

Delicious Ham and Potato Soup

This is a wonderful soup! My favorite potato soup ever. I made a few changes. I used 1 can low sodium chicken broth and one can water to cook my veggies in. I left out the onion (personal taste) and added fresh garlic and grated carrots. I used corse ground black pepper and season salt to taste. Just before I added the milk, I just slightly mashed the potatoes. Once the butter/flour/milk mixture had thickened a bit, I added 1-2 oz of velveeta cheese. Yummy! Served with crescent rolls and bacon bits. The whole family loved it. This will become a regular at our house.

Slow Cooker Chicken and Dumplings

This was great! I changed a couple of things like many others. I used one can of cream of chicken and one can cream of onion. I added fresh garlic and a pinch of cumin. Also used chicken broth and 1/2 can of water. Because of time, I did not add the biscuits, but rather cooked them in the oven and served the chicken over them. Yummy! Whole family loved. I used frozen chicken breats, started it on low at 7 AM, and we ate at 7 PM. The chicken was perfect.

Amy's Cilantro Cream Sauce

Slow Cooker Beef Stew III

We loved this recipe. I only added half the meat and increased the potatoes and carrots. Also used cream of celery instead of mushroom, beef broth instead of water, and added fresh garlic. I also thickened it a bit with flour. I started it at 7:00 AM and we ate at 8 PM. Meat was perfect. Wonderful comfort food. I can't wait for lunch as I brought leftovers!

Chicken Enchiladas I

This is one of our favorites. Hubby and daughters (ages 9 and 11) all love it. The only changes I make are to leave out the 1/2 C water and I use red peppers instead of green. It is different from your typical enchiladas you might get in a restaurant due to the spices used, but don't let that keep you from trying it. Yummy! Thanks for a great recipe!

Basil Chicken and Pasta

This was excellent! Definitely a keeper. I doubled the sauce and used fresh basil and fresh parmesan. I also added a diced red bell pepper and diced tomatoes at the last minute. Very quick and easy to make. Can't wait to have again. Goes great with a glass of white wine.

Baked Ziti I

I loved this dish. My girls and I don't eat a lot of ground meat, so I left it out and added sliced zucchini on top of the sour cream. Yummy! My 8 year old loved it. Will definetly make again.

Mild Cheesy Chicken Enchiladas

This was a very good recipe. I added to it a bit though. I added chilie powder and salsa to the chicken and also refried beans under the chicken mixture. Very good. Both of my kids liked it, which is amazing, and my husband, who is not crazy about chicken. I will definetly make this again. Next time I will add more spice to the chicken though.
