Warm Mexican Corn Dip

Very tasty! I used half the butter and added a few dashes of cayenne as we thought it needed more heat. Next time I will drain the Rotel, as it is a bit runny. We really liked the texture the corn added. Not what you usually find in a dip. Will for sure make again and again!

Latin-Inspired Spicy Cream Chicken Stew

That was wonderful! I used only 1 can of diced tomatooes, 1 can of rotel, a bit less chicken and low sodium taco seasoning. Fantastic! Everyone loved this one. Served with a dollop of sour cream, as it did have a bit of a kick. Also, this makes a lot! Can't wait to make it again.

Yummy Honey Chicken Kabobs

Amazing marinade! Whole family loved it and asked when I was making it again! Didn't change a thing in the recipe. I did put the vegs on one skewer and the chicken on another. I don't my vegs over cooked. Chicken was super moist and flavorful. Will make often during grilling season.

Bacon and Tomato Cups

Love these! I used real bacon pieces, green onion, cheddar cheese and just enough sour cream to hold together. Put into phyllo cups and baked. Served them at a party at my house. The serving tray was 1/2 empty by the time it got to the table! Will make these again and again!

Slow Cooker Cranberry Roast

This was wonderful! I made it exactly as stated. It took me about 2 minutes to throw everything in the crock at 8 before I left for work. When I got home at 5:30, the house smelled wonderful! Great flavor, not too sweet, and the meat was super tender and juicy. This will go into my regular rotation!

Mexican Beef Supreme

Oh My Gosh!! This is so good! I made it just as stated except no green onions (I forgot to buy them). It had the perfect amount of heat. My DH literally licked his plate! :) Served on tortillas with a mild cheddar and sour cream. LOVE IT! I lived in south TX for years before moving north. This reminds me of the food we used to eat there and have a hard time finding up here! Thanks!

Zesty Slow Cooker Chicken Barbecue

This is a favorite at our house. I cook the chicken for about 4 hours on high in chicken broth. Then I drain, shred, and add with the rest of the stuff back in the crock. Cook on low for about another hour. Yummy! I use the original Open Pit BBQ sauce, and a zesty italian dressing. Perfect blend of sweet and spice.

Butternut Squash Soup

This soup was wonderful. I tweaked it a little. I used 1 squash, quartered and roasted for 45 min at 350. Then I cooled it, skined and chopped it. Added it to a pan with about 2 1/2 cup chicken broth, 4 T butter, 1/2 t pepper, 1/4 t nutmeg, 1/8 t cayenne, and dash salt. I also added half of a diced granny smith apple. I let that all cook for a while, then used the potato masher, and let it cook a while more. I cooled it then pureed it in the blender. Back to the stove, added maybe 1/2 c cream and heated back up. YUMMY!! Even DH who swears he hates squash said he would eat again.

Apple Pecan Cornbread Dressing

I loved this! I am hosting Thanksgiving and am looking for new dishes. I used 1/2 broth and half fresh apple sauce (forgot to get juice). I found the amount of moisture perfect. Unfortunately, my DH is ridiculously picky, and could barely force it down. Oh well, back to the drawing board! I am still giving it 5 stars!

Black Bean and Corn Quesadillas

Yummy! This received 2 thumbs up from my whole family. I added double the beans and corn, lime juice, cumin, and chile powder. Baked and then broiled to crisp. DH complained that I didn't make enough! Might add chicken the next time, but it really is great the way it is! Thanks!

Mexican-Style Goulash

Excellent! Whole family loved this. I added more pasta (and water) just to make it go farther. Also added a bit more chili powder, garlic powder and cumin. Left off the cheese, but served with a dollop of sour cream and biscuits. This will go into our regular rotation.
