Refreshing Easter Desert - Watergate Cake Bars

I was looking through my recipe box and I came across the perfect Easter dessert! It's a pretty light green cake with cool whip on top. Serve it with a side of pineapple and a couple strawberries and you have an attractive and yummy dessert. This is a classic Midwestern cake frequently found at church potlucks or family reunions (at least that's what I think of when I make this cake!) This version is low-fat topped with fat free cool whip. The question is, should I make a cake or cupcakes this time around?

Oh yum!! Thank you so much for sharing. I think that you should make cupcakes, but that's just my vote. BTW, I saved your recipe. Thank you!!

Both look great to me. Cake is easier to slice into as many servings as you need but kids sure love cupcakes. I'm saving this recipe...thanks! By the way....KEEP AUSTIN WEIRD! Missing my hometown!

My favorite things to cook
I love to bake; cakes, cookies, and other treats. I like to find ways to make them with less fat and calories, without sacrificing taste. I also love my Crock Pot.
My favorite family cooking traditions
Lemon sugar cookies, banana bread, snicker doodles, pumpkin bread, Italian Crock Pot meatloaf and chicken and noodles.
My cooking triumphs
Cherry pie!
My cooking tragedies
Cake Balls, although they were very tasty, they were a wicked mess! More like cake pudding.
