I enjoy making Boston Cream Pie, but my refrigerator is full! I don't have room for a layered cake. I also would like something a little bit lighter. So, after looking at a couple of recipe books today (including the JELLO brand cookbook.) I came up with a really refreshing low fat version of a yellow cake with chocolate pudding, topped with fat free cool whip. Better than a Boston Cream Pie! It's low fat and really light (even though I just ate a HUGE piece.) I've called it the Austin Cream Poke Pie, since I live in Austin. Here's the recipe:< .

Looks great! Saved and noted, I do believe I'd be using the whipped cream though. The 7up in place of oil, that's new to me, can't wait to try it.
