Tangy Pineapple Chicken

Reviewed: Oct. 30, 2011
Tasty sauce and easy recipe. The only change I made was to add a bit of soy sauce after reducing the sauce.

Honey Roasted Red Potatoes

Too much cayenne pepper ... next time use less or use dry mustard instead. We did triple the honey but it was over powered.

Refried Beans Without the Refry

Great tasting recipe and easy to make. Only downside: too much salt for us. I'll try 3 tsp salt next time.

Chicken with Quinoa and Veggies

Reviewed: Sep. 14, 2011
Second Time: Increased stars to 5. This time we made it with brocolli instead of squash and feta cheese and it was incredible! First Time: Delicious! I realized I didn't have onions or zuchinni so I used mushrooms, squash, and green tomatoes from the garden instead. I also used parmesean cheese and red pepper flakes. The lime juice and mushrooms were amazing!

Apple Crisp II

Reviewed: Sep. 14, 2011
Amazing and simple! I used way less sugar (~1/3c) and brown sugar (~1/2 cup) and it still tasted great. I did not double the amount of topping as suggested by other reviewers but I cooked in a 9 inch pie pan.

Tasty! Used bannana peppers instead of jalapeno just because that is what we had from our garden.

Jay's Signature Pizza Crust

Reviewed: Jul. 31, 2011
Delicious! I put it in a warm oven and it took less than an hour to double in size. We pushed the crust out towards the edge of the pan which resulted in a nice thick crust.

Pizza Dough I

Reviewed: Jul. 26, 2011
Delicious and quick. I had some extra time so I did let it rise for an hour: "1 1/4 cups warm water, 1 pkg active dry yeast, 1 tblsp sugar, 1 tsp thyme or Italian seasonings, 3 tblsp olive oil, 3+ cups of flour, 1 tsp salt. Mix water, yeast, sugar & oil in mixer bowl. Then add flour & salt. Mix-knead for 10-12 minutes, sprinkling with flour to keep from sticking to bowl. Dough should be elastic & smooth. Place dough in oiled bowl, cover dough with oil, cover & let stand 1 hr at room temp. Then divide dough 2 equal parts roll into balls, cover with damp towel & let stand another 10 mins. Use immediately. Don't forget to poke holes into dough with fork once rolled onto pan to let steam escape while baking. "
