Amy's Barbecue Chicken Salad

My husband and I absolutely loved this! Reason for only 4 stars -- Like other reviewers, I adjusted the dressing to 3/4 c. of Ranch and 1/4 of BBQ. This made the dressing super delicious. Also, I felt the french's fried onions didn't sound like they would go with this dish well, so we crumpled tortilla chips over the salad instead. We will definitely make this again!

Chicken and Black Bean Chili

Delicious! Husband raved about it too. It has a nice kick, but not too much. Only gave 4 stars since I felt 5 cups of water would have made this soup rather than chili. I listened to the other reviewers and cut back on the water by 2 cups. Also, didn't find or use the chipotle but felt it was delicious without it. Will DEFINITELY make again and have shared this recipe with other family members.

Golden Potato Soup

This soup was DELICIOUS! It was a hit with my husband as well. I only gave it 4 stars, however because I added an extra cup of milk and it was still a very very thick soup. I think had I added only what the recipe called for, it would have been too thick. Next time, I'm going to double the recipe so we have more leftovers! :)

Quick Quiche

This was very good. I forgot the milk the first time I made it and was wondering why it was so dense and dry. :) The second time, I followed the recipe correctly and it turned out perfect. I did, however bake it for 6-7 extra minutes to make sure it was done and it was still very moist.

Slow Cooker Chicken Stroganoff

I made the recipe exactly as is except for adding about 1/4 c. of chicken broth in the beginning with the margerine and Italian dressing mix. Also, I only added 1/2 the packet of dressing (which turned out to be a smart move, in my opinion). It came out PERFECTLY. My husband and I both really enjoyed it and I will definitely be making it again.

Mississippi Tea Cakes

I made these with the hope that they would turn out like my mom's cookies -- cake-like and moist. These turned out like soft sugar cookies. There was no cake-like texture at all. I kept going over and over the recipe wondering if I did something wrong, but I followed the recipe exactly and can't understand why they didn't turn out like most of the other reviewers describe. I do a lot of cookie baking and this is the most disappointing batch I've ever made. Maybe my expectations were too high. It's a shame my mom lost her recipe.

Teriyaki Pork Tenderloin

Just made this tonight and followed the marinade recipe to the letter. I marinated overnight. The pork came out super tender/juicy and very flavorful. I had to cook it longer than it called for -- at 160 degrees, it was still pink on the inside and being pregnant, I am supposed to stay away from undercooked meat. I was concerned this would dry it out, but it was still so juicy! My husband loved it as well.

Chicken Florentine Casserole

If I made this recipe as written, I probably would have only given it 4 stars but since I made a few changes based on the other reviews, it is absolutely 5 stars! I'm not a big spinach or mushroom fan but I LOVED this! I pretty much copied what another reviewer did word for word. I first fried 5 pieces of bacon in a frying pan and then sauteed the chicken (cut into bite sized pieces) in the bacon grease. I then sauteed the spinach (used 1 bag of fresh prewashed instead of canned) and mushrooms in the bacon grease/chicken juice. I added 1/2 c. mozzerella to the sauce and sprinkled another cup on top for the last 10 minutes of baking -- the mozz browned beautifully only being in uncovered for 10 mins -- I also covered with foil for the first 1/2 of baking before I put the cheese on. I know cooking in the bacon grease isn't the healthiest way to go but it sure did add tons of flavor! I served over angel hair seasoned with a little basil and butter (to keep the pasta from sticking). SOOOOO good!

Famous Pork Chops

Made these exactly as written except I cut the butter by 1/2. They were DELICIOUS!!! I'm not a big pork chop fan and I had seconds and my husband and I even argued over who got the one we had left over. :)

Pasta Con Broccoli

This recipe was a great starting point but I think if made as written, it would have been a bit boring/bland. I followed other reviewer's suggestions and sauteed onion, garlic and mushroom as well as some orange pepper (the store was out of red). I used bowtie pasta. I also used fat free half and half with a little corn starch as others have done in order to make it a bit lower in fat. As I made it, it was delicious and my husband raved about it.

Yum Yum Sauce

Quick and Easy Alfredo Sauce

Very good stuff. Even my picky kids loved it. Only problem I had was mine didn't thicken very well despite following the recipe to the letter. It was still very good and I plan to make it again. I served sauteed chicken breast over it for protein.

Too Much Chocolate Cake

I made this as written. It came out fine, but I wasn't that impressed. Maybe my expectations were too high due to the rave reviews but I felt like I'd had much better chocolate cake before. It wasn't as moist as I thought it would be and the flavor left a little to be desired. Good but nothing special.

Satiny Chocolate Glaze

I wasn't crazy about this glaze. It came out like it was supposed to, I guess but it was a bit too "rich" for my taste. I don't care for semi-sweet chocolate (aside from chocolate chips in cookies) so maybe it was more a matter of personal taste. There was no sweetness to this.

Ham and Bean Soup

This was very very good! Excellent flavor, and it was SOUP... not a thick bean mush that I usually wind up with when trying to make bean soup. I think next time I will leave out the bratwurst and put in a little more ham. Not a bratwurst fan. :)

Marie's Easy Slow Cooker Pot Roast

This was melt in your mouth delicious! I used a 2.5 lb chuck and let it go for 9-10 hours. It was falling apart and was perfect! I, like other reviewers used low sodium beef broth. I made up my own rub and used that before browning it in the pan (Kosher salt, fresh ground pepper, red pepper flakes, paprika, and garlic powder). I made a gravy from the leavings in the crock pot and that was delicious as well (Just the juice/broth with a cornstarch/water mixture -- added some salt and pepper). I also used Yukon Gold potatoes. Those or red potatoes are really best for this kind of thing. They hold together better than Russet. I just ate some leftovers for lunch and they were just as good as last night. Mmmmmmm!

General Tsao's Chicken II

Holy cow, this was awesome! Absolutely horrible for you, but AWESOME. I'm pretty picky about my General Tsao's chicken but this was just as good, if not better than any I've had from a restaurant. The only things I did differently -- I used boneless skinless chicken breasts instead of thighs. I also didn't have any orange zest so I just left that out and it was still so good! My husband had 3 helpings. Huge pain to fry that chicken but it was so worth it!

Slow Cooker Chicken and Dumplings

Really really disappointed in this as I was excited to make it based on the rave reviews. Followed directions to the letter and it came out dry and kind of sticky. Not "saucy" enough and the flavor left quite a bit to be desired. I think I'll go back to my Aunt Anne's recipe.

Chicken Fried Chicken

Meh. That's really the only word I can think of to describe this. I cooked it exactly as written and it came out really good-lookin'. :) Taste is all a matter of opinion, but I found it to be bland and it didn't really live up to the rave reviews. Really didn't think it was worth all of the effort. Don't think I'll make it again. Sorry.
