Beer Spice Cake

I made this recipe just as the original cook recommended. I used the loaf pan. I whipped the batter until it was frothy. It was moist and delicious.

Favorite Fish Chowder

Customized this recipe for two people, chowder is really not a good meal as a leftover. I used half a large onion, 1/4 cup of margarine, 2 cups chicken broth (instead of water), 3 med. potatoes, 1lb of cod, 3 slices crumbled cooked bacon, 1 cup of half and half and a 1/2 cup of milk. I didn't use lemon juice but instead I added lemon pepper seasoning in place of salt and pepper. (I added the cooked bacon chunks to the onion after it was cooked, right before I added the chicken broth.) This is a true New Hampshire chowder, the kind I grew up on.

Flavorful Flounder

I tweeked this recipe a little, instead of using 3T of green onion, I did one T of chives and one T of minced onions, instead of 1/4 t salt, I used 1/2 t lemon pepper seasoning, I baked it for 5 minutes at 450 and broiled for 5 minutes. My husband said it was the best fish he ever had! Great recipe!

Celery Salad

I needed this recipe to get started but definitely tweeked it. I used raisins and dried cranberries instead cherries, omitted the peas as my husband refuses to eat them and used fat free ranch dressing instead of mayo combo and added chopped pecans. This salad went great with buffalo wings!
