Mouth-Watering Stuffed Mushrooms

I love, love, love this recipe!! I have only given it 4 stars because the given quantity of ingredients for the filling results in way too much left-overs. To make 12 mushrooms, i diced only 6 of the stems, and then used 1/4 of the remaining ingredients. This made the perfect amount of filling for 12. I also sprinkled the tops with freshly grated parmesan cheese for the last couple minutes of baking. Will make again and again!!

Curried Rice Pilaf

Although i modifed this recipe to suit the ingredients i had in my kitchen, i would rate it a 5 based on my version. I used Uncle Ben's Long Grain Perfection rice, which has a cooking time of only 10 minutes, and used 1 cup rice and 2 cups of broth to equal 6 servings. I kept the amounts for the remaining ingredients the same, while omitting the salt altogether. I used toasted pecans in place of almonds, and dried cranberries instead of the raisins, and will definitely do the same next time, both for taste and appearance. The dish got rave reviews, and everyone had seconds.

Janet's Rich Banana Bread

Have tried at least 6 other banana bread recipes in searching for the perfect one - and this is a keeper! So moist and delicious. Adding 1/2 cup mini chocolate chips was a nice touch.

Blackened Salmon Fillets

I followed the ingredients for the spice mixture as listed, but replaced half the onion powder with garlic powder. Rather than using butter, i brushed the fillets with olive oil, before coating with spices. I heated a cast aluminum pan on the BBQ over high heat, sprayed it with cooking spray, and then put the salmon in for about 4 minutes per side. Turned out delicious - just the right amount of heat in the spices!! It was fantastic topped with the "Indian Relish" from this website. Will make again!

Blueberry Cream Muffins

Very good muffins, although not quite sweet enough for my tastes. I will make them again, but next time will add extra sugar, as others have suggested. Have a nice texture though, reminding me of the Tim Horton's chocolate chip muffin - not too dense, maybe a little more like a cupcake.

Fresh Asparagus Risotto

First time ever making OR even tasting risotto - and this is definitely one of my new favorites!! Made exactly as stated, except also cooked 1 1/2 cups of sliced fresh mushrooms with the asparagus, which i WILL do again next time. Love this recipe!!

Simple Scones

I made these scones tonight for company, and they were delicious!! I didn't use frozen butter, just chilled, and cut it in with a pastry cutter. Rather than raisins, i used 1/3 cup dried cranberries, 1/3 cup white chocolate chips, and zest of 1/2 an orange. Can't wait to experiment with other variations!!

Sky High Yorkshire Pudding

The best yorkshire pudding i have ever eaten!! Followed the recipe exactly, baking for 30 minutes. My inlaws were very impressed, and decided to trade in their tried-and-true recipe for the sky high version!

Soy Ginger Salmon

This recipe is definitely a keeper. I used the ingredients as stated, but only had time to marinate for 1 hour. I did baste with the sauce as i broiled the salmon, and the flavour was wonderful. I sprinkled some sesame seeds on before serving, to made it look more appealing. There were no leftovers!!

Honey-Mustard Grilled Trout

I made this recipe with ingredients as listed. The weather was too poor to use the grill outside, and I was in a hurry, so i sauted the onion in a frying pan, and then lightly browned the trout fillets in the same pan. I then spread the fish with the sauce, and baked uncovered @ 400F for about 12 minutes. I didn't find that the onion did much for the flavour, the sauce would have been enough. Next time i'll omit the onion altogether. My boyfriend, who screwed up his nose at the mention of trout, loved the meal. Will definitely make again. It is sweet, but the overall flavour is mild, and not too overpowering for the trout.
