Chicken with Tomatillos and Poblanos

Reviewed: Oct. 3, 2009
I've always wanted to make something with tomatillos, and with all the great reviews, this is what I tried. I loved all of the fresh ingredients, but took a lot of time to prepare. This dish had good flavor, but didn't stand out as something I had to make again.

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

Reviewed: Sep. 24, 2009
I used my husbands last bottle of beer (Amberbach) to make this and luckily he loved it. He even joked that he "stocked up" for next time I wanted to make this. I used a green pepper instead of red because that's what I had, and I topped it with mexican blend cheese. Yum!

Irish Boxty

Reviewed: Jun. 25, 2009
I doubled the batch and made about 10 large pancakes. It did take a long time to make if you don't have instant mashed potatoes around, and mine were a little thicker than in the restaurant we had them in. We served them with a curry dish and got great reviews.

Irish Brown Soda Bread

Reviewed: Jun. 25, 2009
Just got back from Ireland and wanted to hold onto our experience. I made this for a recipe exchange and to give a few loaves away to friends and everyone loved it.

Super easy and delicious! I doubled the sauce, and my chicken was very moist.

Chicken Vegetable Medley

Reviewed: Oct. 27, 2008
Good flavor and easy to make. We served it with couscous. This makes a lot of food, and the two of us had to throw some away after eating leftovers a few days in a row. So my only advice is to halve the recipe if feeding only a few people.

Bolas de Mani (Peanut and Plantain Balls)

Reviewed: Sep. 19, 2008
I like plantains so overall I enjoyed this and it was very easy to make. I thought adding the peanutbutter would help my husband enjoy them more and he still won't touch them. Make sure you mash the plantains really well so the balls stick together. I didn't have any honey and he suggested(after they were in the oven) to use pancake syrup to sweeten them up a bit. I did sprinkle them with cinnamon before baking. If you like plantains but don't want to fry them then give this one a try.

Butternut Squash Casserole

Reviewed: Jun. 1, 2008
I had never made squash before so I was a little skeptical, but this was amazing! I baked the squash before hand for 45min and used ritz crackers on top. Also used half the sugar. Definately worth the time it takes!

Delish! I might try making them bite size for a party.
