Banana Muffins II

So, so good. I made them exactly as written, and added half a bag of mini semi-sweet chocolate chips. Got rave reviews - this is now my go-to quick and easy muffin (not to mention a great way to use up brown bananas). Thanks!

Ting-Town Barbeque Beef Sandwich

Fantastic! I discovered too late that I was out of ketchup, so I just used the better part of a bottle of Sweet Baby Ray's barbeque sauce. Roast got amazingly tender in the crock pot, and made terrific sandwiches - plus plenty of leftover beef that we froze for another meal. We'll definitely be making this again - maybe with pork roast next time. Thanks!

Authentic Louisiana Red Beans and Rice

This was FANTASTIC - even my bean-hating husband ate two bowls! I cooked it in my crock pot - didn't soak the beans or saute the vegetables, just rinsed the dry beans and combined everything (except rice) in the crock pot. I cooked them on high for about 4 hours and then bumped it down to low for another 3 hours or so, and left the lid off for about the last half hour so the broth could thicken a bit. The beans got quite tender this way, and the flavors all blended together nicely. Chopping the veggies in a food processor made them virtually disappear, which meant that my kids ate it without a fuss (because visible vegetables = blecch). Other minor changes - I used a full T. of cajun spice, and added a tsp. or salt. I'll be making this again soon!

Bourbon-Glazed Ham

This was awesome! I did change the recipe a bit - I doubled the glaze (without the water) and poured it over a sliced, 4-pound boneless ham, then cooked it in the crock pot on low for about 5-6 hours. It made a simple, delicious Easter ham - excellent flavor.

Icy Banana Milkshake

Good basic recipe! Instead of sugar, I followed another reviewer's suggestion and used a packet of instant chocolate pudding mix; I also used 4 cups of milk instead of 5, and added extra ice. My kids loved it!

Spicy Sweet Potato Soup

I thought this was delicious, a very different way to use sweet potatoes. The flavors blend well and gave it a Thai sort of flavor, what with the lime, ginger, red pepper, peanut butter, etc. I followed the recipe exactly, although I had to substitute ground ginger in place of the gingerroot (1 tsp was about right) and bottled lime juice for the fresh. The toppings really made it special - especially the fresh tomato! My kids turned up their noses, but I wasn't expecting any different; my husband and I loved this. Will make again!

Cherry Ham Glaze

Fabulous. I sliced my (fully cooked) ham, staggered the slices in my crock pot, poured the glaze over it, and cooked it on low for about 4 hours. The ham was PERFECT - tender, flavorful, sweet without being overpowering. Our dinner guests gave it rave reviews - I didn't tell them how simple it was!

Apple Pie by Grandma Ople

AWESOME! I followed the recipe almost exactly - used 8 good-sized Granny Smith apples (and yes, they all fit in my glass 9" pie dish). For the syrup, I added generous shakes of nutmeg and cinnamon, and substituted brandy for the water. Then I did what other reviewers suggested and poured most of the syrup over the apples before I added the top crust, then spread the rest of the syrup over the crust. I didn't have to adjust the bake time at all - this pie came out perfect! I will be making this again!

White Chili I

This was fabulous! I was looking for something easy that I could throw together with ingredients I already had on hand - this was perfect. I used leftover chicken, doubled the recipe, and added a little extra chicken broth; and I threw in a chopped up green pepper, which added a nice flavor. This will definitely be added to my recipe rotation!

Pork Chops with Raspberry Sauce

This was fantastic! I served this to my in-laws for dinner last night, along with hot spiced cider, steamed carrots, and Harvest Rice Dish (this site - per another user's suggestion). Fabulous fall meal! I did double the sauce, and sprinkled the finished product with chopped walnuts. Excellent!

Harvest Rice Dish

This was fantastic! I couldn't find just wild rice, so I used a box of Uncle Ben's Original Long Grain and Wild Rice mix, minus the sauce packet - it worked great! I also didn't have slivered almonds on hand, so I used chopped walnuts. Even my in-laws loved it! I'll definitely be making this again.
