About this Cook
I'm a Food Service Director for Union Court Assisted Living and love my job. Before taking this job, I worked as a Restaurant Manager for four years and graduated from Michigan State University with a degree in Dietetics.
My favorite things to cook
Anything Mexican or Italian. I love the flavors that are commonly found in these dishes, and I love to use fresh vegetables. My favorite recipes are the ones you can throw pretty much anything in to fit your own personal taste, my least favorites are baking where exact measurements are important.
My favorite family cooking traditions
My favorite family tradition is probably one I use the least. Every Sunday my mom makes a beautiful brunch filled with colorful egg dishes, hashbrowns, pancakes with maple syrup and lots of fresh fruit. I'm not much of a morning eater, but this is always my favorite meal.
My cooking triumphs
I love the feeling when you've thrown something together that sounded good in your mind, and it turns out being great.
My cooking tragedies
I'm sure we've all burned a soup or two on the stovetop.

Perfect Recipe, Perfect Cookies!!! (I did use butter instead of shortening)

Boston Baked Beans
I cook for about 30 people at an assisted living home & they love this recipe. I followed the recipe exactly (except I use northern beans instead of navy) the first time around and they loved it. The 2nd time I used canned northern beans so I could skip the overnight soaking & boiling and they couldn't tell the difference.

Bob's Awesome Lasagna
Excellent Recipe, I did make a few changes though. I used uncooked noodles and added 1/2 c of water to the sauce. Also, I added 2 eggs & 1/2 c parm cheese to the cottage cheese.
