Chocolate Truffle Cookies

Wow! These are to die for! If you are not a richchocolate fan, these are not for you. They are a mess to make as they get your hands pretty dirty but WELL worth it! 9 minutes was the perfect baking time. Make sure to let them sit a few minutes before removing from the pans. For the people who thought they were dry, you may have over-baked them. Mine were still soft in the middle the next day without putting them in a container.

Butterfinger Chunkies

I made these yesterday using about 10 bars from a fun size bag of Butterfingers. These are absolutely delicious. They do come out a bit flat so don't expect a fat cookie. I let them rest on the sheet about 5 minutes and ours all came off perfectly. Now that halloween is coming and candy is going on sale, I will be stocking up on Butterfingers!

Cinnamon Bread I

This was delicious! I did as others said and mixed the wet and dry separately then combined. I also double the topping and put half in the middle and half on top. Mine took closer to an hour to bake. At 50 minutes the middle was still not quite done. I want to make a note here that it makes a big difference in the pan you use. I made this twice, first time in a shiny pan and the next in a darker. The shiny pan took longer to bake and was much moister inside. The darker pan seemed to get it very brown and I could have baked it less time than the other.

I love this..just enough spiciness to it. I usually sub another white fish for the Halibut as it is quite expensive here. Usually Cod or Sole. Tilapia will work although it's not a very healthy fish.

Butter Brickle Frozen Delight

I made this for Easter dinner and OMG!..it is awesome. If you are not a fan of sweet, don't bother. It was like a frozen cheesecake that melted in your mouth after thawing a few minutes on the counter. This will be made many times again for sure. YUM!

I just made this tonight and it was delicious! I cut down on the amounts as it was just for me but didn't omit or change anything. I served it over brown jasmine rice. Thanks Deb! I will be making this often!

Creamy Chicken and Wild Rice Soup

This was delicious! I cooked my rice separately because I didn't want the rice to absorb all the liquid. The wild rice still needed a little more cooking so I simmered it for a little while in the soup before adding the cream. I also used fat free 1/2 & 1/2 and some milk instead of the cream and it was delicious!

Catherine's Spicy Chicken Soup

I thiought this was very tasty. It makes a TON though so you may want to halve the recipe. I did think there were too many tomatoes in it so I would cut back on those next time. It had a great flavor and I used chicken broth in place of the water/bouillon.

Rustic Round Herb Bread

This was very good..the dough was just a little thick so I added another drop or two of milk just to get the flour combined. I did leave out the sage as I don't care for it and added a few shakes of italian seasoning in it's place.

Quick and Easy Green Chile Chicken Enchilada Casserole

These were very good. I ran out of enchilada sauce for the top layer so next time I will buy one large and one small can of the sauce. I also used a mexican blend of cheeses and added a can of chopped green chilies..very good.

Stuffed Pepper Soup IV

We thought this soup was wonderful. I left out the sage though as I am not a fan. I used one can of beef and one can of chicken stock and I had cooked the rice in the morning so I didn't have to worry about it. It seemed to take a little more thyme to me and a fair amount of salt probably due to the rice. I will definitely be making this again.

Cheddar Chicken

I thought this was delicious. I took advice from others and salted the chicken. I did put pepper, and Tony Cachere's Herb and Spice seasoning in the cornflake mixture which gave it a really nice taste. They came out very moist. I will definitely be making this again.

Sweet and Spicy Stir Fry with Chicken and Broccoli

This was outstanding!. I thought I had hoisin sauce but was Oyster sauce..different taste but worked well. The garlic paste is really spicy so go easy if you aren't used to hot foods. I used ground chicken which worked very well. I served this over Ramen noodles. I will definitely make this again.

Rustic Country Bread

I just made this a couple days ago and was very pleased. The taste was exactly what I was looking for and the crust was crunchy and golden. Allow yourself plenty of time to make this bread. I turn my oven on for about 30 seconds before I put my dough in to rise and I also leave on the light. This is the recipe I had hoped to find for the last couple years! I will definitely be making this a lot!

Roast Sticky Chicken-Rotisserie Style

This turned out wonderfully moist and delicious. I had a 4lb bird and it took me 4 1/2 hours. Next time I will put some of the seasoning under the skin since we don't eat that. I will definitely be making this again.
