Spicy Lime Grilled Shrimp

Great flavor!! I marinaded for about 6 hours and threw them in a grill wok (meant for vegetables on the grill) and tossed them for about 6 minutes. Turned out great!! Will be repeating.

Zucchini-Coconut Cookie Bars

These had really good flavor, but are more like a cake than bars. The coconut flavor is subtle, but present though the icing makes them a little too sweet and distracts from the yummy flavors. They are very light and fluffly and not as dense as I think bars typically are. Also, to get the nutrition value that is stated in the recipe the bars are pretty small for a serving. You would most likely eat 2-3 times that for a normal size serving.

Beef Wellington

Great flavor! I made this for my husband's birthday and he loved it. Large servings if you follow the recipe. I used 2 - 8oz. tenderloins. I didn't use butter on mine, which took longer to brown, and mushrooms were chopped instead of sliced. I couldn't find liver pate so after talking to the butcher I used Braunschweiger and it tasted wonderful!! The pastry did get a little soft on the bottom, but still tasted great. I didn't make the sauce and thought this did fine without it. I was impressed this worked out as well as it did. I did have to extend cooking time because the meat was pretty rare - thermometer is a must to prepare this dish. Definitely worth a try!!

Blueberry Stuffed French Toast

Wowwyy!! Yum!! I used only 3 oz. reduced fat cream cheese and only tore 8 pieces of bread for the top. I took it out of the refrigerator about 1/2hr-1hr before baking it for 30 minutes. Then I served it by scooping the pieces, flipping them bottom side down onto the serving plates and spooned compote over them. Don't skip on the compote. This is delicious!!

Hoisin-Glazed Salmon

Great flavor!! I didn't have chili garlic sauce (used some tabasco instead) or fresh ginger root (used powdered ginger instead) and used minced garlic. Yum! Will repeat.

Mocha Chocolate Chip Banana Muffins

Great flavor with subtle mocha flavor! This is a nice recipe instead of using my overripe bananas for banana bread all the time. I did follow suggestions of decreasing margarine to 1/4c, used 1/2c each of white sugar and brown sugar instead of all white, added 3/4c applesauce, 4T finely ground coffee, used 3/4c all purpose flour and 1 1/4c whole wheat flour instead of all white flour, plus I added 2T flax seed. Yum!!

Classic Tiramisu

I thought this was okay for tiramisu. I had troubles with it being a little too runny. I think you have to let it sit in the fridge for a couple days to help because I followed the directions and had stiff peaks in my heavy cream. I used 3 packages of soft lady fingers and quickly dipped them in Kahlua instead of brushing them. Flavor is pretty good, I just wasn't as happy about the consistency and would have liked it to be thicker. I used a springform pan, but can't release it because I am not sure it will keep its shape. If you are going to try it make it a few days ahead to allow the coffe/liquor flavor to meld into the tiramisu and also to let is set and thicken. I think I would try a different recipe next time instead of this one.

Henry and Maudie's Oatmeal Cookies

This recipte is an okay oatmeal cookie base. Nothing spectacular. I have had better. You have to make sure to let the dough sit after it is made and form a little, otherwise I got flat, greasy cookies that ended up in the garbage. I can't way I will hold onto this one.

Meat-Lover's Slow Cooker Spaghetti Sauce

Loved this recipe. I forgot to add the sugar and afterwards thought why add it with as wonderful a taste. I also used lean turkey italian sausage and lean ground beef. I then froze it in servings for later use, too.

Zucchini-Raspberry Bread

My fiance said this was the best bread I have made. Instead of shredding the zucchini I finely chopped it and the grated lemon peel is a must for the flavor!

Red, White and Blue Ambrosia

This isn't the type of dessert I typically eat, but it tasted alright to me and I got lots of compliments at the picnic I took it to for how great it was. I didn't have much left over. It is pretty costly to make compared to other items, though.

Jumbo Dark Chocolate Cookies

Love these!! I used Ghiradellie bittersweet chocolate chips and Hershey Dark Chocolate cocoa. I also made them normal size and baked them @ 350F for 14 minutes. Fantastic dark chocolate cookie that isn't overly sweet!!

Banana Oat Muffins

Alright taste. A little bland. I added some butterscotch chips to a few muffins and some dark chocolate chips to others which helped give them a little more flavor. I did substitute 1/2 the sugar for splenda and NF greek yogurt for the oil. Okay for a subtle morning muffin, but I think I like my banana bread recipe better.

Clone of a Cinnabon

Yummy - my husband had two as soon as they were out of the oven. Next time I would follow the advice of flipping the pan over as soon as you take them out of the oven to let the cinnamon filling fun over the rolls and then frost them.

Yummy Roll Ups

These are super yummy and definitely help you over reach your sodium load for the day. One way of making this even easier is to use whipped cream cheese - it spreads easier and use deli thin ham. Quick, easy and really are yummy!

Chocolate Wave Zucchini Bread

I baked these into 5 small/mini bundt cakes. The flavor was pretty good, but nothing outstanding for a zuccchini bread. I tried to layer the cake like is said, but found the chocolate layer ended up being heavier and started to sink down into the original batter. I have had better chocolate zucchini recipes before, but this one is alright.

Apricot Chicken

Terrific flavor and incredibly easy and quick to make. The sauce was a little thinner than i imagined it would be - I thought this would be more like an asian sauce, but was much thinner. Easy to fix with a little extra cornstarch. I also added some pineapple chunks and red pepper and served it over jasmine rice. Yum!! Definitely will repeat with how quick and delicious this was!!
