Capers and Halibut

This was a way to give halibut a little flavor, but I wasn't overly impressed. It is okay and looks pretty nice, but there are more flavorful and different ways to use halibut that I would do before repeat this. It is simple and easy if you are looking for something quick, but if you have the time I would try something else with more flavor or uniqueness.

Modenese Pork Chops

Terrific flavor and super easy!! I didn't use the butter to brown the sides of the pork chops, but used spray canola oil in the pan and worked just great! I will be putting this in the 'keeper pile'!!!!

Zucchini-Coconut Cookie Bars

These had really good flavor, but are more like a cake than bars. The coconut flavor is subtle, but present though the icing makes them a little too sweet and distracts from the yummy flavors. They are very light and fluffly and not as dense as I think bars typically are. Also, to get the nutrition value that is stated in the recipe the bars are pretty small for a serving. You would most likely eat 2-3 times that for a normal size serving.

White Chocolate Macadamia Cranberry Dreams

These had good flavor, but were a little too cake-like texture for me. I like my cookies with a little firmness to them as opposed to soft like a cake or brownie. They would probably be better as a bar. The combination of flavors is really nice.

Basil-Tomato Tuna Steaks

Easy way to add some flavor. Next time I would cook the steaks a little less since we like them a little more rare. I used frozen ahi tuna filets, canned diced tomatoes w/ basil, garlic and onion, fresh slices of mozzarella and italian seasoning (since I didn't have basil). It was simple, quick and refreshing. I served fresh steamed broccoli with a little ff italian dressing lightly drizzled over for an accompanying side.

Apricot Chicken

Terrific flavor and incredibly easy and quick to make. The sauce was a little thinner than i imagined it would be - I thought this would be more like an asian sauce, but was much thinner. Easy to fix with a little extra cornstarch. I also added some pineapple chunks and red pepper and served it over jasmine rice. Yum!! Definitely will repeat with how quick and delicious this was!!

Broccoli Beef II

A little bland in flavoring. I added chopped green and red peppers. I used yellow onion instead of green. I would add crushed red pepper and a few other things to spice it up or made add more ginger and such to give it a little more flavor.

Shrimp and Asparagus Fettuccine

This was okay. Mostly a good Mediterranean diet dish. It is pretty bland and needs some extras to give it a little more flavor. It is healthy and okay, but not a lot of flavor, overall. I wouldn't repeat this if I was just following the recipe. Some herbs, spices and wine sauteed with the dish might help.

Cranberry Wheat Bread

Great flavor!! I ran out of cranberries and used dried sweetened cherries instead. I also added a little flax seed, wheat germ, vital wheat gluten and wheat bran to up the health factor. Great!! Will make again.

Chocolate Banana Bread Pudding

This recipe was okay. It basically tastes like banana bread with chocolate chips fresh out of the oven. It took longer to bake than the recipe stated. It really wasn't what I anticipated for bread pudding. I think I will try a different recipe in the future.

Banana Rum Cake

Very moist with great rum flavor that is not overpowering. I used bacardi rum (not dark rum). I also increased the rum to 1 c. and decreased the water to 1/3 c. I baked it in a bundt pan for a little over 55 minutes. I didn't frost it and instead did the rum glaze suggested with 3/4 c. powdered sugar, 1 T. skim milk, 1/8 tsp. rum extract and drizzled it over the cake. TERRIFIC!!

Burgundy Pork Tenderloin

Great flavor! Looks very fancy, too. This was easy to prepare and came out wonderful. The leftover juices I didn't get to thicken to gravy-like consistency, but I served it the way it was and it was terrific over the meat, garlic mashed potatoes and roasted green beans I served. My husband thought it was fantastic. I will be making this again in the future.

Chocolate Chip Cookies Lite

Yes - lite cookies is always good, but these definitely were not cookies. They are definitely more like mini pancakes. They do not have any cookie crunch or texture like a soft cookie. I like them, but not what I was thinking of when I wanted a cookie. My husband was not excited about these and told me to not be so healthy at the expense of taste.

Hoisin-Glazed Salmon

Great flavor!! I didn't have chili garlic sauce (used some tabasco instead) or fresh ginger root (used powdered ginger instead) and used minced garlic. Yum! Will repeat.

Dad's Double Whole Grain Pancakes

Great flavor and fluffy! Cut the recipe in half and made 10 pancakes using 1/4 cup batter/pancake. Used all whole wheat flour, 3 T unsweetened applesauce instead of butter, 1 c water, 2 T sugar and the rest splenda, added 2 t cinnamon and 1 tsp vanilla extract.

Zucchini-Raspberry Bread

My fiance said this was the best bread I have made. Instead of shredding the zucchini I finely chopped it and the grated lemon peel is a must for the flavor!

Zucchini Yogurt Multigrain Muffins

Not an overly sweet muffin, but nice flavor. Great way to get a healthy start to the day. I omitted the vegetable oil, decreased applesauce to 1/4 cup, omitted teh white sugar, drainged the zucchini well, added 1/2 cup ground flax seed and 2 Tbsp wheat germ.
