Henry and Maudie's Oatmeal Cookies

This recipte is an okay oatmeal cookie base. Nothing spectacular. I have had better. You have to make sure to let the dough sit after it is made and form a little, otherwise I got flat, greasy cookies that ended up in the garbage. I can't way I will hold onto this one.

Buttermilk Wheat Bread

Nice, soft bread with mild flavor. We had it for breakfast this morning and it was delicious with almond butter. We are looking forward to making sandwiches with this great loaf.

Mocha Chocolate Chip Banana Muffins

Great flavor with subtle mocha flavor! This is a nice recipe instead of using my overripe bananas for banana bread all the time. I did follow suggestions of decreasing margarine to 1/4c, used 1/2c each of white sugar and brown sugar instead of all white, added 3/4c applesauce, 4T finely ground coffee, used 3/4c all purpose flour and 1 1/4c whole wheat flour instead of all white flour, plus I added 2T flax seed. Yum!!

Mound Bars

Yum! My husband loved these so much he said they were better than an actual Mounds bar! This is a keeper - just make sure to use dark chocolate to stay true to the Mounds flavor.

White Chocolate Orange Cookies

These are yummy! I didn't change anything really. I was short a Tb of butter and added a Tbsp or 2 of water to help the batter soften a little after mixing. The hint of orange was delicious and perfectly matched with the white chocolate chips and walnuts. I did half the chocolate chips and this still seemed a lot for this recipe. I would repeat based on the feedback I got from those that finished at work (:

Cowboy Oatmeal Cookies

Lots of butterscotch flavor. I cut the butterscotch chips to 1/2 cup and added 1/2 cup dark chocolate chips. I like more of a dark brown sugar flavor in cookies, but this one didn't have that. Even so - Yum! Yum!

These are like crisp butter cookies with cinnamon. I took these to work - I work with 4 Argentine immigrants and they devoured them. They loved them and made them feel right at home. This will go in my collection of cookies to repeat.

Meat-Lover's Slow Cooker Spaghetti Sauce

Loved this recipe. I forgot to add the sugar and afterwards thought why add it with as wonderful a taste. I also used lean turkey italian sausage and lean ground beef. I then froze it in servings for later use, too.

Yummy Roll Ups

These are super yummy and definitely help you over reach your sodium load for the day. One way of making this even easier is to use whipped cream cheese - it spreads easier and use deli thin ham. Quick, easy and really are yummy!

Loved the flavor and the steaks came out so tender. I used the bacon wrapped filets you can buy in a 2 pack at Walmart. Quick and easy! Will repeat in the future.

Chocolate Zucchini Cookies

Cake-like cookie with terrific flavor. They were a little dry when I finished mixing them, but a little water mixed in helped. I also increased the amount of zucchini, used half white and half whole wheat flour and added Ghiradelli bittersweet chocolate chips - yum!! An absolute must! You could make these without the zucchini, too, I would think and it wouldn't change it other than take some of the healthiness away :)

Blueberry Zucchini Bread

Similar texture to banana bread. I substituted 1c. frozen blueberried for fresh, decreased sugar to only have 1/4c. white sugar, 1/2c. packed brown sugar, 1/2c. splenda. I also followed others and substituted half the oil for unsweetened applesauce, used half unbleached white flour and half whole wheat flour and decreased salt to 1/2tsp. I thought this bread had great flavor and I will make it again (just with the healthier adjustments I made).

Blueberry Stuffed French Toast

Wowwyy!! Yum!! I used only 3 oz. reduced fat cream cheese and only tore 8 pieces of bread for the top. I took it out of the refrigerator about 1/2hr-1hr before baking it for 30 minutes. Then I served it by scooping the pieces, flipping them bottom side down onto the serving plates and spooned compote over them. Don't skip on the compote. This is delicious!!

Chocolate Wave Zucchini Bread

I baked these into 5 small/mini bundt cakes. The flavor was pretty good, but nothing outstanding for a zuccchini bread. I tried to layer the cake like is said, but found the chocolate layer ended up being heavier and started to sink down into the original batter. I have had better chocolate zucchini recipes before, but this one is alright.
