Minestrone Soup I
I made this today, and it's very good! I made it as written (other than using garbanzo rather than white, and it's a 4.5 star! Later I added some crushed red pepper flakes, basil, oregano, zucchini, and it was even better!

Raspberry Almond Coffeecake
I used 8" round. I heaped 2/3 batter in center--spread a bit, placed berry mixture on top of center and used the berries to spread and press out. Then I placed remaining batter on top and spread slightly with fingers. I also added an extra Tbsp butter and a Tbsp more sour cream. I only had fresh blueberries, so I used them and they work perfectly! Only needed to bake for 30 minutes and toothpick was clean. Used almond extract in glaze. EXCELLENT and very moist.

Ravioli Dolci (Sweet Ravioli)
My family loved these cookies. I used my own cherry almond preserves. These cookies are just perfect for the Christmas table. The dough is easier to work with when kept chilled. I made both round and square shapes. If the dough becomes too soft, simply put it in the fridge for a few minutes. I even put the squares (still on the waxed paper) back on a shelf in the fridge while I filled half a sheet.
