Peanut Butter Cake VI

Very good. Made this for a family reunion over the weekend, and it went over very well. My personal feeling is that it could use more peanut butter flavor in the cake part itself, but I don't know how you would do that without altering the texture. Over all really good!

Easiest Peanut Butter Fudge

Fantastic...made it several times, but always make the following adjustments: 2 cups of brown sugar, 1 cup peanut butter, and 3 cups confectioners sugar. Perfect every time.

Rhubarb-Raspberry Crunch

Flavor is awesome. I used Splenda for baking in place of the sugar. Made the mistake of mixing the butter mixture by hand...warm large ball that wasn't pretty. But in the places I glopped it on top, it was fantastic to the tastebuds. Next time I'll do it right and I'm sure it will be a lot more pleasing to the eye.

Slow Cooker Beef Barley Soup

Great basics. Used all beef broth, added carrots, used 3 large yellow onions, real garlic, more spices. It was still bland at the end, but I found the secret....added some fennel seed for the last half hour....perfect!!

Barbecued Beef

My son heard he and his brother were having roast beef for dinner..and wasn't pleased. After it was made and put on a bun for him we went wild. I didn't alter anything except used yellow mustard. My husband and I would prefer it with more spice...but it was perfect for the teenagers. Thank you so much for a great dinner to fix that they both loved!!

Corn Tortillas

I hope others have better luck than I. I tried everything from cut up vac-loc bags, to wax paper, to wax paper with Pam coating....I think my tortilla press was even calling me names. Finally got a few semi-circles into the pan...but it certainly wasn't what I'd call a success.

Brown Family's Favorite Pumpkin Pie

Everyone went crazy over this. My adaptations were to press some cinnamon sugar into the crust (obviously undersized crust I bought...the pie was perilously close to overflowing)...but my sons thought it was fantastic with a lot more filling than crust. And they asked that I skip the topping, so I just sprinkled more cinnamon sugar on top before baking. 5 stars here! Thanks!!!

Brussels Sprouts in Mustard Sauce

The flavor of the sauce really doesn't get a chance to "perk up" the sprouts. The sauce has promise, but would be more appreciated with something that got the chance to soak it in.

Hugs and Kisses Crescents

These were great. FINALLY a way to use up all those "school fundraiser" candy bars (that are always huge and who would want one of your kids eating a whole one of those as a snack). I just used bricks of the giant Hershey bars, dusted them with cinamin sugar...and wallah! A great new snack that they can microwave for 10 seconds after school.

Lemon Horseradish New Potatoes

This was a really great change from the hum-drum potato side dish. I used several sprays of "I can't believe it's not butter" and omitted the butter. Its very tangy, but could use a little more heat for us.

Lemon Pepper Pasta Seafood

Chocolate Chip Coffee Cake

My kids just loved this. I added some applesauce for moisture after reading several comments about it being dry. It is wonderful! I think that I will use mini chocolate chips next time so they distribute a little easier. It made a wonderful Christmas breakfast for the little ones who aren't in to eggs and whatnot. Thanks!!!

Spicy Fish Soup

This is wonderful. I omitted the diced chili peppers and used diced jalapenos (we like everything really "kicked up"). And I used canned diced tomatoes with chili's instead of plain tomatoes. I also added some Emeril's Southwest Essence, and lots of Cajum Seasoning. This is surely a keeper around here!!!! Thank you!!

Zucchini Parmesan

This was fantastic. I used my husbands spaghetti sauce (which is really flavorful...and has sausage and ground beef)....and I mixed in some parmesan "shaker" cheese mixed in, rather than the mozz on top. This is a definate keeper!!!

Au Gratin Potatoes

Awesome!!! Just made this for tomorrow, for the 4th of July festivities (snuck some as a taster...WOW!!). I used 1 can cream of chicken, and one can cream of celery (both Campbells healthy choice lowfat), threw in some minced garlic too. Can't wait til tomorrow for another serving...I bet it's even better the next day!

This was incredible. As usual, I doctored it up with lots of Old bay, Emeril's Essence, and a lot more hot sauce (also used extra onion, and lots more garlic). My husband and I absolutely crave it this soup.

Slow Cooker Taco Soup

This has to be the best soup recipe I've found yet. I added some extra things like sliced black olives, some "Essence" by Emeril, leftover turkey, and used frozen corn versus canned. My husband and I are contractors, so we eat out of coolers every day, and this has to be by far the highlight of our day. Thank you!!!!

Slow Cooker Split Pea Sausage Soup

I just threw this in the crockpot this morning, and my husband loves it. It took a lot longer to cook than the recipe called for (the peas didn't seem to want to soften). But with patience (and lots of garlic added, this is a new favorite after "tweaking".
