Truck-Stop Buttermilk Pancakes

This is the first time I made pancakes from scratch. I have always made them from a box. I did not care for these at all. I'm glad I cut it down and yes, I used the right measurements. I looked to make sure I didn't forget something, I didn't. I will stick with the box for now.

Bacon for the Family or a Crowd

The directions on bacon show an option to bake, but how many have ever read it? This is the best way to cook a whole lb without all the mess. I dont always use foil but I do spray the pan. As long as you overlap, the whole lb will fit on a big cookie sheet. Just watch closely at the end cause is gets crisp quick. I dont ever use thick bacon. Any will work as long as you watch it. I bake at 400.

Sausage Jalapeno Poppers

I read alot of recipes with sausage so I gave it a try and thought it was awful. I am used to the Best Ever Jalapeno Poppers that use bacon and a breading. Bacon bits (the real kind) are SO MUCH better than sausage. I will stick with bacon.

Slow Cooker Chicken Taco Soup

I didnt use the beer. I dont like beer in my food. I still thought it was excellent. My kids didnt like it. Would probably be better in the winter.

Fried Corn with Smoked Sausage

My whole family liked this recipe. I dont care for fresh peppers, but I had a can of corn w/ diced peppers which worked really well. I did forget the accent but I dont think its good for us anyway ? and still loved the recipe. We liked it with chicken flavor rice (all I had).

Crispy Chocolate Log

Very easy to make. (I dont do logs often) I was getting ready to make rice crispy treats and ran across this..fate?? I dont know, but I'm glad I did, its a great recipe. It took me about 10 min, I did not add the pb, but otherwise followed recipe. It was very easy to roll with the wax paper. I cut off the end cuz I couldnt wait to try it. Its chilling but I know it will be 5 stars...it tastes really good.

Baked Corn

I followed the recipe and was not impressed at all. It was kinda blah. Maybe 1-2 T of sugar would have been better? The family didnt really like it either. (and we love corn!)

White Cheese Chicken Lasagna

I made a few changes. I added 1/2 c asiago cheese to the ricotta (prob didnt need it). Also, the most important change was to add the spinach to the cheese sauce. The sauce was really thick, so I added a little extra milk. The spinach in the sauce made it look better and was one less layer. My layers were: cheese & spinach sauce, noodles, chicken, noodles, ricotta layer, 2 c mozzarella w 1/2 c parmesan, then noodles, sauce, more chicken, noodles, sauce, 1/2 c parmesan and parsley. Alot of layers. Kids liked it.

Mini Pineapple Upside-Down Cakes

I used regular muffin tins and could not fit the cherry in with the pineapple. Plus having to cut the pineapple rings, I would not make again unless I used jumbo muffins. I followed the recipe exact (meaning I didnt change anything). Some cherries fell off, which is why the larger muffin tin would work better (put the cherry in before baking). The cake was kind of plain, next time I would also use the pineapple cake mix some people suggested. Bottom line, as is, its a 4. With some changes it could be a 5.

French Fried Potatoes

Fresh Strawberry Upside Down Cake

This sounded very strange, but everyone liked it. I added extra marshamallows to cover evenly. Used a 9x13 pyrex, sprayed, and it came out perfect. I liked it warm and also cold with cool whip.

Jalapeno Popper Spread

I cant give 5 stars because I did not like this. 4 stars because several others did. I did not follow the recipe exact, which could be the prob, I used miracle whip (probably my prob but I dont like mayo). I also mixed 1/2 parmesan cheese inside and rest on top with bread crumbs. Next time I will try real mayo but use 1/2 amt sour cream.

Angel Chicken Pasta

Even though I changed this some, it still deserves 5 stars, for the idea atleast. After I read alot of reviews, this is what I did and it was great. The whole family said a definate keeper. 1/2 cup butter, 1 pkg dressing mix, 1 cup chicken broth, 1 can cr of mushroom, 1 can cr of chicken, 2 small cans mushrooms. I warmed this up on the stove, then poured it over strips of chicken breasts in the crockpot. Then stirred it together and cooked for about 5 hours. Then stirred in 1 8 oz pkg cr cheese and 1/4 c parsley while the bow-tie pasta was cooking. It was kind of runny but made enough sauce for the pasta. Very good and also the next day. Thanks for the recipe.

Two Ingredient Pumpkin Cake

I've only done this as cookies with a choc cake mix. You can use any type of cake mix and the flavor will be the cake mix flavor..lemon makes lemon cookies..choc cookies with sugar free pudding and fat free cool whip makes a good low cal desert.

Dutch Apple Pie with Oatmeal Streusel

GO AHEAD AND PLAN ON MAKING 2 PIES AT ONCE IF YOU WANT MORE THAN 1 PIECE! ITS EXCELLENT! ONLY RECIPE I WILL USE FOR NOW ON..I did do a little different: Used 10 inch deep dish frozen pie crust and baked 10 min in 300 degree oven..used about 7 cups apples..increased flour/sugar little bit..no allspice or lemon zest..it was so good that I have to make it again 4 days later! I really pushed the apples down and piled the crumb mixture..looked like alot until it cooled and it was wonderful.

Mouth-Watering Stuffed Mushrooms

With just a few changes, this is a 5 star. From reading other reviews, I added real bacon bits (from a bag) to the stem/garlic mixture and after filling with a plastic bag, I dipped the mushrooms in melted butter then in bread crumbs seasoned w/ a little garlic salt. They turned out really good.

Chicken Wing Dip

I had heard this was really good and was anxious to try it out at my work, but I am glad I did. Everyone loved it. I had to print the recipe for almost everyone that ate it. I am giving it 5 stars because I did use all the ingredients, I just changed it to what I thought we would like. (the original may be just as good). I think the changes I made did make it better but how do I really know since I didnt do as stated?? I used 4 cups boiled shredded chicken, 1 cup hot sauce (must use Franks), 3/4 cup ranch dressing and no cheese in, only on top. Definately use a mixer for mixing the cream cheese, sauce and dressing. Then just stir in the chicken. It was very easy. I did bake it as stated. I offered both tortilla and corn chips..most liked the corn chips. A very good recipe!

Sour Cream Coffee Cake III

I made this in a bundt pan, as stated, and the top raised high and then deflated when I took it out of the oven. (I think another reviewer said the same thing) I was supposed to take it to work but after trying a piece, I ended up not taking anything. This weighted so much and didnt have that great of taste. I admit that I ate a couple of pieces since it sat on my counter for 5 days, but I definately would not make this again.

Banana Banana Bread

I dont give 5 stars if I have to change the recipe which I did after reading the reviews and found the additions do make a difference. However, only by adding 1/2 tsp baking powder, 1 tsp vanilla and 1/4 c white sugar(probally not needed), I would definately rate this 5 stars. Everyone at my work raved that it was so moist and looked so good. I did cover it with alum foil at the end just to make sure it didnt get too brown. My search for a Banana Bread is over because this one was so easy and SO good I will keep this one forever! I did add pecans which most people at work preferred. EXCELLENT BANANA BREAD!
