This recipe has never really been perfect to me. Something just seems wrong--i't just a little too dense and the crust a little too tough. Here is my best version to date (for my benefit): 1 can pumpkin (warmed in microwave), 4 eggs, 1/2 c veg oil, 1/2 c applesauce, 2/3 c water, 1 tsp vanilla, 2 c white sugar, 3-1/2 c flour, 1 tsp baking powder, 1 tsp baking soda, 1-1/2 tsp salt, 1-1/4 tsp cinnamon, 1-1/4 tsp nutmeg, 1/2 tsp cloves, 1/4 tsp ginger. Filled 1 lb loaf pan 2/3 of the way full and topped with struesel crumb topping. Baked for 1 hr 10 min at 350. With remaining batter I added chocolate chips and filled one muffin pan. Baked ~40 min.

FOR THE STREUSEL TOPPING:
2 Tbsp Butter, Softened
1/4 c Brown Sugar (I used light)
1/8 c Oatmeal
1/8 cups All-purpose Flour
1/2 teaspoon Cinnamon
combined with fork and spread over top of bread loaf pan.
