Chocolate Chip Pumpkin Cookies

This is a good, easy recipe. My changes: I used 2 tsp cinnamon, 1 tsp pumpkin pie spice, 1/2 cup applesauce, 1/2 cup oil, and I used dried cranberries in place of the chocolate chips. Switching out the chocolate for fruit and changing half of the oil to applesauce makes it a little more health-friendly. Adding the pumpkin pie spice really adds to the yum factor. Over all, delicious and easy to make. Note: the dough will look more wet than you expect for cookies, don't worry, they come out perfect.

Thick Cut-Outs

Good flavor and beautiful cookies. To answer the question of some previous "reviewers," YES you do add both the 6 egg yolks and the 4 eggs (which means you will use a total of 10 eggs for this recipe and have to figure out what to do with 6 egg whites - omelets anyone?). I rolled them out to between 1/4 and 1/2 an inch. Then make sure that your oven is right and cook them 8 minutes, no more. 2 minutes on the cookie sheet finishes off the cooking and they don't get brown edges. They are puffy and sweet. I added 1 1/2 tsp vanilla and 1 tsp almond, but if you don't like almond, these would probably be okay with just the vanilla. They work really well with frosting. I made lots of Christmas trees and candy cane shapes. We had almost as much fun eating them as we had decorating them as a family.

Best Ever Popcorn Balls

Much easier than carmel popcorn as far as preparation goes. Easy to make, very sweet. Flavor is similar to rice crispy treats. I doubled the recipe and made it into 12 snowmen. If you want to make snowmen, you can use icing or mini M&Ms for eyes, nose, mouth, and buttons. If you plan to use little candies (of any kind) you will need to put them on the snowmen ASAP, because they have to be really stuck on the snowmen before it cools too much. I greased my hands with Pam cooking spray because it was much easier and faster. Great recipe.

Creme Brulee II

I tried this recipe twice. First exactly as the recipe states and second as suggested by another reviewer (with an extra egg yolk and whipping cream instead of heavy cream). The first test was watery and took over an hour to set properly in the oven. It never had a that custard-like texture that I love. The second test was better, but still not satisfactory. This one took just under an hour to set up and still had a grease-like liquid surface that had to be poured off (even after allowing to cool in the fridge for 6 hours) before it was palatable.

Sweet Dinner Rolls

Gingerbread Men

Wonderful taste and very simple recipe to follow. I find it important to note that if you roll them to thin, they will burn black. Also, I only bake mine for 9 minutes at 350 degrees, as they burn easily. Too much flour when you roll them out will also cause the later cookies to be a little brittle.

Chewy Peanut Butter Cookies

These cookies were delicious, but if you bake them a minute too long (or don't get the timer immediately), they get too crisp. Take the too crisp cookies and crush them up for a great pie crust.
