Cheddar Pecan Wafers

These are most delicious! I made them last year and came looking for the recipe again this year. I did freeze some logs and they were still great in February for a party then. Make small logs so you can just pop one wafer in your mouth, as they are very tender and may create many crumbs if too big and one has to bite them, also if small logs you will have many many lovely wafers. Do warn folks, as they will think they are cookies and you wouldn't want to surprise them too much. Yes, they do taste like butter, but I do not find any problem with that.

Fresh Tomato Basil Sauce

What could be better then a fresh tomato and basil. To all of you who want to peel a tomato, all one has to do is pour boiling water over them and let them sit for a very brief period, and the skin will come right off. 2 minutes is a bit excessive, to my way of thinking, and unnecessary. If you don't want to cook, you could just peel and cut the tomatoes, add the garlic and basil, with a bit of salt, pepper, oil and vinegar and pour that over the pasta. I know, one should never make suggestions about a change when it is so drastic, but try it, its good, especially on a hot night. Sprinkle parmesean cheese on top. Done.

Fiesta Grilled Chicken

The black bean salsa was wonderful! I didn't use either green pepper or black eyed peas, and substituted oil and vinegar, salt and pepper for the Italian salad dressing (because I didn't have any of these, and sweet vidalia onion instead of red onion, and it was definitely a keeper! The chicken took longer than the recipe said but I had huge chicken breasts, so of course it would take longer to grill. I also marinated it longer than the 10 minutes it stated, about 4 hours, it needed that to get the flavor imparted to the meat. Yum!
