Mom's Baked Beans II

Took these to a pot luck and they were a huge hit. Even better cold from the fridge the next day. Have been trying to find a recipe that could mimic the beans my mom used to make - these are very close! Definitely a keeper.

Golden State Mushroom Soup

This was good. I cut calories by using a bit of olive oil and broth to saute shrooms instead of butter, and light sour cream. I may try the soy sauce idea to make it a bit richer. I also added some garlic salt and some chives since I had them in my herb garden.

Cranberry Pistachio Biscotti

The taste of these was excellent and a friend said they were the best biscotti she ever tasted. A few comments as I did follow the recipe exactly> 1) I think the texture was more like a cookie than drier like biscotti. 2) I also am not sure how they came out with 36 servings, I was thinking more like the big, thin biscotti you get at the coffee houses and came up with maybe 20. 3) I had operational issues where they seemed to crumble when I sliced them. 4) I saw this recipe somewhere else and drizzled melted chocolate chips over them per that recipe, which was a lovely addition. I will try this again.

Pasta e Fagioli II

Put me on the list of satisfied customers! This soup is delicious and quick and easy to make. I didn't think it was bland at all. A definite repeat that I'll be eating all weekend. I took the suggestion of someone else and used hamburger as it seemed as if it would add a bit more substance to the soup than proscut. I also threw some grated parmesan on top just because it was there. Mangia!

Spicy Grilled Shrimp

Didn't have paprika so I used ginger. Took the advice of someone else and used my George Foreman Grill. One word. YUM! I'm honestly thinking about making these again tomorrow!

Chicken Broccoli Ca - Unieng's Style

I thought this was just OK. I can see where, as some folks said, it would be a good starter to add other veggies, but it was really rather bland. I even added more oyster and soy sauce as advised. Definitely would up the garlic and perhaps some cayenne or something. The advice about adding the bok choy at the very end is also true.

Chole Saag

Oh, my gosh, this was fantastic. We simmered a chicken breast cut into chunks in garlic, salt and pepper and olive oil in a separate pan until really tender and threw that in at the very end. What a great meal..we ate with some store bought naan. PRIMO!! We followed the suggestion and used fresh spinach.

Hungarian Mushroom Soup

I had to snicker at the other soup recipe reviews that touted how the soup tasted just like Campbells Cream of Mushroom soup. OK, seriously, who wants that? THIS soup is so much more. I used generous slices of both baby ports and criminis. I followed it pretty much to the letter and like the subtle flavor of the dill. I didn't find it overpowering at all. I like the other reviewers ideas re: how to make it a bit more calorie-conscious and may try that next time.

Mom's Coleslaw

I'm on board with the five star group. I have an incredible abundance of red cabbage in my garden this year and this is a quick and easy recipe that makes it disappear at amazing speeds. Would like to try it with jicama and/or celery seeds as I've seen in other recipes, but haven't any on hand - this is fantastic the way it is, however.

Vietnamese Style Vegetarian Curry Soup

This was very, very good. I followed the recipe to a tee except that I only put in 1 tbsp of fish sauce. There was some heat due to the red pepper flakes, but it was a pleasant amount of heat. Lots of fun to make and not hard - just lots of slicing! Paired with spring rolls, it was a good dinner.

Vietnamese Fresh Spring Rolls

These were great, and the sauces do make the dish. We followed the suggestion of one of the other reviewers and pan-fried thinly sliced sirloin w red pepper flakes, garlic, etc. and added to the rolls with the shrimp.
