Broiled Tilapia Parmesan

This is an awesome recipe! I've made it 5 or 6 times already and my husband and I can't get enough of it. It's really easy. When I didn't have the exact herbs, I substituted others and it was just as good. Thank you for sharing this delicious recipe.

Tilapia with Tomatoes, Black Olives and Corn

This turned out really well, even though I used canned corn, canned diced tomatoes and sherry instead of white wine (I didn't have any). A HEALTHY way to cook fish! Next time I'll use less corn (My fault) and add some cilantro and/or parsley and maybe basil. I didn't have to cook the fish as long as it suggested (25 min.) - 15 was enough. Thanks for a winner, in my book!

German Red Cabbage

Mediterranean Baked Fish

This is one of my all-time favorite recipes. I've made this dish 5 or 6 times and it's always a hit. I never could get orange roughy but have substituted lemon sole, cod, or tilapia (the best), also using extra leeks, basil leaves , some calamata olives mixed with plain black ones, and drizzling extra olive oil over the top. The best part is preparing most of it ahead. It cooks by itself while I enjoy appetizers with my guests! I am grateful to the person who submitted this recipe.
