My favorite things to cook
I LOVE mediterranean and middle-eastern food. I especially love the flavours of Southern France and Sicily (capers, anchovies, olives, tomatoes) - maybe it's a past-life ... But my big crowd pleasers are my desserts and baked goods. The appreciative moans I get when people eat my food, is just as rewarding as watching people appreciate my works of art.
My favorite family cooking traditions
Breakfast on a Sunday when I was growing up, is one of my favourite childhood memories, and probably lead me to learn how to cook from a very early age. Every Sunday on a rotation basis, mum or dad would prepare crepes, then the next Sunday fava beans (done the Lebanese way), then Manakeesh (a Lebanese herb pizza served for breakfast - the herbs being a mixture of thyme, sumac and toasted sesame seeds mixed with Extra Virgin Olive oil, and spread onto a dough similar to pizza!) But my fave breakfast as a child was a type of bruschetta my dad would make and share with me. So simple - finely diced ripe tomatoes, chopped directly on top of a fresh round of Lebanese bread, and then sprinkled with sea salt, pepper and good extra virgin olive oil! So simple, but so divine. We'd eat the topping with torn pieces of Lebanese bread. Then the base would have all the juices soaked in, and tasted so delicious, kind of like Panzanella.
My cooking triumphs
Every night is a triumph, because I make meals from scratch and from cupboard ingredients that inspire me. I think it's a triumph if you can cook every night without a recipe, and your loved ones are moaning with pleasure as they eat.
