Broccoli with Garlic Butter and Cashews

Reviewed: Mar. 12, 2008
I could eat this every night! I used it as a side dish to a meatloaf casserole that I made from leftovers, and it complemented the meal perfectly. Of course, it's Asian flavor lends itself to complement most Chinese dishes, too, but you can do a lot more with this one!

One Bowl Buttercream Frosting

Reviewed: Mar. 11, 2008
I used a little too much milk, but otherwise the texture was perfect. It just hasn't set is all. I left the cocoa out, but next time I may use it, or try it with cocoa and orange juice and orange extract. Yummy!

Cake Mixes from Scratch and Variations

Reviewed: Mar. 11, 2008
My new favorite cake recipe! I used the shortening, plus a 1/4 cup vegetable oil, which made this my moistest scratch cake to date. I also had to use a little more milk than the recipe called for, but just these little changes made this the best cake ever. Bravo!

Cornmeal-Crusted Catfish

Reviewed: Mar. 11, 2008
Perfect! With a little white vinegar drizzled over the prepared catfish, a side dish of garlic brussels sprouts, and a garden salad, this is a meal my husband raved about. Excellent recipe for catfish.

Wow! This was delicious! And it smelled wonderful while I was cooking it. I'll definitely add this recipe to my collection as a favorite vegetable.

Stuffed Green Peppers I

Reviewed: Mar. 11, 2008
This is very similar to how my mother makes it, and it is so good! The second time I made it, however, I was missing a few indgredients and substituted canned green beans for the tomatos and A-1 sauce for the Worchestershire. Don't laugh, it was still really good, and my husband loved it. I will make this one again and again, but I'll have all the right ingredients on hand.

Aromatic Asparagus

Reviewed: Mar. 10, 2008
Mmmmm!!! I used the suggestions of others here and omitted the water and used half the milk and broth. I didn't have all the listed ingredients so I used these substitutions: 3/4 Cup chicken broth (broth from Amanda's chicken casserole recipe preparation [not published]) Havarti cheese for the parmesan It was incredible! I really want to use this on other vegebables using different kinds of broth.

Baked Fish Dinner For Two

Reviewed: Mar. 5, 2008
Very tasty way to prepare cod! My husband and I will be having it again. I followed the recipe exactly, with the one exception of cooking it for 13 minutes after the fish is added. I think this simple dish would probably be a welcomed favorite at potlucks.
