Crunchy Eggplant Parmesan

This is so worth the work of getting the eggplant crispy. I remember my mom's being gushy, for lack of a better term. This is a keeper. Be careful when you broil, it's quick but worth adding this step!

Fluffy Biscuits

Excellent biscuits! Used other reviewers advice and did 1/4 C Cold Butter and 1/4 C butter flavored shortening. I did notice I had rolled them to 1/2 inch, those biscuits didn't rise as high as the set that I rolled to 3/4 inch - go figure. Very light, very flaky... yum!

Scones

This was a extremely easy! I ended up cutting up the butter in little pieces and using my hand to mix it up. It worked great! I wanted to spruce them up so I followed other suggestions. 1/2 the batch I added mini choc. chips. The other 1/2 I sprinkled 1/2 tsp vanilla in it and a bit of cinnamon. I mixed that up so it was evenly dispersed. After cutting them with a biscuit cutter I took the little bit of the egg/milk mixture I had remaining and spread it on top. I then sprinkled cinn./sugar mixture on top of them... Baked them up for a little less than the 15 minutes. They came out wonderful!!! Thanks for a great easy recipe! Yum!

Chicken Pot Pie VIII

Made this tonight... this was easy. made the dough this morning and put in fridge. Used some of the 1/2 C butter to saute celery and onion. Added remaining butter and melted. Followed the recipe from there. Did use broccoli and carrots (did steam before adding to mixture in pie), and leftover corn. Mixed them in. MISTAKE: added a bit of milk and will not do that next time. Otherwise, this was very good... family loved it, will make again. tasted just like our local bakery's frozen pot pie but better because I made it! Next time I will add some cheddar cheese before putting on the top layer of dough...

The Best Banana Bread

I'd have to say this was delicious! I took the advice of adding 1 tsp vanilla, 1 T cinnamon, 1/2 C sugar and 1/2 C brown sugar (replace the 1 C of white suger). My banana bread eaters of the house gives this a 5!

Hamburger Potato Casserole

easy, quick prep. dinner with basics you usually have on hand. substituted the cr of mushroom w/ what I had, which was cream of celery. did add basil and 3 cloves of garlic, 4 potatos instead of 3, and a can of mushrooms. i think it still needs a bit more seasoning, but it was a hit w/ my kids and hubby. hubby didn't think it needed anything else. will make again.

Supreme Chicken

I'd have to agree with another reviewer that it was a bit on the bland side. Not sure how to spruce it up without ruining it. Did add garlic and a splash of white wine.. Just wish it would have tasted more like it smelled..

Ramen Noodle Frittata

kids loved helping to make this dish and to eat it too! I did change it up a bit. We added 3/4 lb. cooked ground beef and sauteed onion. mixed together with cooked noodles, eggs, seasoning packets. put in a 9X13 greased dish. sprinkled about 1/2 cup shredded cheddar cheese and baked at 350 degrees for about 15 minutes - 20 minutes -- being careful not to bake to where the noodles get hard on top. 4 out of 5 of us liked it, that's why the 4 stars. Hubby thought it could use more spice..I'll try to zip it up a bit next time.

DH loved this recipe. The rest of us, so so -- I do make a good meatloaf recipe, however this was a nice change with not too much work. The bacon is a nice touch for more flavor.

Home Style Macaroni and Cheese

This recipe was a hit for potlucks. I would have scored it a 5 star, but my kids aren't crazy about it.. but hubby loves loves loves it. The cream cheese adds a different flavor to it and you can't seem to take just one bite...you have to take 2, then 3,... very tasty. I made NO changes to the recipe as others suggested and it was fine.

Ground Turkey Casserole

3 out of 5 of us liked this recipe. It was an easy recipe and had a "just one more bite" quality of taste to it. For some reason 2 of our children didn't like the sour cream/cheese mixture. I still may make this for a potluck, just not for a dinner for us. But it you want easy and yummy, this is it. Definitely a good "comfort" food for cold winter days.

Apple Cake III

This recipe was a hit at a church function!!! It was so easy too! I did change some things via the previous reviews; Used spice cake mix, added 1 tsp cinnamon, used 1 can of apple (while still in can used knife to cut up into smaller pieces) and then added one fresh apple cut up. For topping, used 1/2 C of brown sugar and more butter and flour to make a crumbier topping. One time I did add oats in place of nuts and that turned out great too! Will make again!

Ground Turkey Noodle Bake

Kids loved this! I used Fettucini noodles instead of egg noodles and spaghetti sauce (since that's what I had on hand). Turned out fine! Noodles were a little tasteless, like other reviewers stated. Next time will add more spices to noodle mixture, but otherwise a great dish. Easy to put together.. will make again.
