Rhubarb and Strawberry Pie
This recipe was GREAT. The store didn't have any rhubarb, so I just used a can of peaches and sliced them up. I baked the pie for the minimum amount of time and then shut off the oven. After letting the pie sit in the oven for an hour or two, it was perfect! Not runny at all. Highly recommended.

Black Beans with Pico de Gallo
This was SO good. I'm a vegetarian, so I didn't use any meat product, just olive oil. I didn't have much in the house in the way of fresh vegetables, so I didn't have the Pico de Gallo on top, but just the beans were delicious!

Tex-Mex Macaroni and Cheese
I made this dish a little more healthy and vegetarian friendly by using a whole wheat macaroni kit and Boca. I also added about a half cup of salsa. It was delicious!
