Apple, Carrot, Or Zucchini Cake

Reviewed: Apr. 7, 2008
Everyone who tried this raved over it! My friend said it was the best carrot cake she ever had. I followed the recipe exact, but needed to bake it for 45 mins. I made my own cream cheese frosting by blending 8oz of cream cheese, 2 heaping tablespoons of cool whip, 1/2 tsp of vanilla and half cup of sugar (use a little less if u dont like a real sweet frosting)

Best Ever Sausage with Peppers, Onions, and Beer!

Reviewed: Apr. 7, 2008
fabulous! i made this for a few friends and my bf and we all loved it. i made some variations. First, i cut the recipe in half, but i only had 3/4 lb sausage so i used that and 3/4 lb of chicken. I used one can of coors light. I threw everything in the crock pot, set it on low for 8 hours and served it over brown rice. Very easy and delicious!

Middle Eastern Rice with Black Beans and Chickpeas

Reviewed: Apr. 2, 2008
I thought this was a great tasting, healthy meal. I cut the recipe in half (3/4lb ground turkey, one can each beans, 1 can chick broth, and the spices to our tasting). I did however use 1 cup uncooked brown rice because I found the recipe a little to watery using half. Other than that, I thought it was great.

Lasagna Roll Ups

Reviewed: Apr. 1, 2008
loved the idea! very easy. i didnt find it to be messy at all. I omitted the tofu and added some ham and sausage to some rolls and some mushrooms in the rests. I split the recipe in half (making 8 rolls) which was plenty for just me and my boyfriend! although he did eat 4 of them in one sitting :-)

Italian Sausage and Zucchini

Reviewed: Mar. 27, 2008
Great recipe and very easy! I used one lb of sausage and 1/2 lb of cooked ham. I threw the ham in with the veggies. I used a can of italian style diced tomatoes instead of the stewed tomatoes. Also added a bit of oregano, basil, garlic and parmesean cheese before serving. Served over whole wheat pasta.

love it! Tasted great and was easy. I omitted the red pepper flakes (boyfriend hates spicy food). Instead of frozen, I used fresh broccoli, parboiling it for five minutes before adding it to the pasta.

Three Cheese Spaghetti Pie

Reviewed: Mar. 8, 2008
This was a hit in my home. I omitted the pie crust, and mixed the ricotta mixture with the spaghetti. I did not have any groud beef, so I cut up some frozen turkey meatballs and used that instead. Leftovers tasted great. Will definitely make again.
