Salmon Patties I

Reviewed: Feb. 5, 2014
Very good! I only used about a tablespoon of bread crumbs as I could tell the mixture would be too dry to form patties otherwise. I liked it with lemon juice squeezed over the patties.

Chicken Pot Pie IX

Reviewed: Dec. 20, 2013
Couldn't stop eating this! I used leftover turkey and a bag of frozen veggies. I used the No Roll Pie Crust, (half whole wheat flour, coconut oil), it was perfect!

Berdean's Cube Steak

Reviewed: Dec. 20, 2013
First let me say- not a fan of cube steak. In the past I would make it for family and eat something else. However, this recipe made it taste pretty good. Still not a fan of the texture, but it was more tender than I have had in the past. I had no beef bouillon so just used beef broth.

No Roll Pie Crust I

Reviewed: Nov. 30, 2013
This tasted amazing as a crust for Chicken Pot Pie IX! I only had coconut oil so used that. I cannot imagine a better oil for best flavor. Very easy to mix together two seperate crusts. I patted the first one into the pie plate and pressed the top crust onto a piece of tinfoil then inverted onto pie filling and peeled foil off. Not a pretty crust, but pretty darn good!

Sausage and Kale Soup

Reviewed: Nov. 10, 2013
I did a recipe search with ingredients I had on hand and this soup turned up. I had chicken spinach asiago sausage, (a bit spicy), and it worked wonderfully! I was only missing the cauliflower so substituted red skin potatoes. My family really enjoyed it, also.

Mushroom Pork Tenderloin

Reviewed: Oct. 19, 2013
We really enjoyed this recipe! The pork was perfectly done and very flavorful. I did not make gravy, but instead just added the rice to the sauce and mushrooms in the pan. It made an easy side dish.

All-in-One Casserole

Reviewed: Oct. 1, 2013
Good recipe for getting your servings of veggies! Its not a 'party in your mouth' recipe, but a solid 'mmm'! I added summer squash and red pepper.

Sauceless Garden Lasagna

Reviewed: Sep. 5, 2013
We really enjoyed this recipe. I used an 11x7 pan to fit the shape and size of my roasted red pepper lasagna noodles, (that I parboiled). I didn't have enough fresh tomato so I used a small can of diced tomatoes, too. I didn't have spinach, just added some summer squash instead. I was skeptical of adding the balsamic vinegar, but it really made this dish! I recommend only using high quality vinegar. Great summer meal!

Chicken in Sweet Pepper Sauce

Reviewed: Mar. 26, 2013
The chicken turned out fantastic, but the sweetvpepper sauce was underwhelming. All in all pretty good meal I will make when I find myself with an abundance of sweet peppers.

This makes fabulous chicken even without the prosciutto! So easy and delicious it is going into regular rotation.

Grilled Chicken Over Spinach

Reviewed: Mar. 5, 2013
Delicious! I sauteed chicken in pan. I added mushrooms , onions(yellow) and garlic about five minutes before chicken was done. I added (baby)spinach just for two minutes, just until wilted. Cooking all in one skillet really gave the vegetables great flavor!

Next Day Turkey Soup

Reviewed: Feb. 14, 2013
Very good soup! Not sure why some find it to be bland unless they did not salt and pepper to taste. I used about 1 and 1/2 tsp of dried sage and leftover white turkey meat rather than dark meat. I will be making this again!

Good soup! I add some nutmeg to taste in the end, otherwise it is a tad bland.

We really liked these! I would make them more often, but picking bones out of salmon is very tedious work.

Quinoa Tabbouleh

Reviewed: Mar. 19, 2012
I enjoyed this more than traditional tabbouleh. The only suggestion I have is to cut down on the parsley, but that was just a personal preference.

Roasted Vegetables

Reviewed: Dec. 22, 2011
What a delicious way to cook vegetables! I had quite a variety of veggies leftover from different things that I wanted to use up, so I did. I had baby carrots, summer squash, red onion, red pepper, cauliflower, broccoli and sweet potato. It only took about 20 minutes at 450 degrees for the vegetables to be done to our liking.
