Jordan Marsh Style Blueberry Muffins

Just made these this afternoon. I preheated the oven to 450, then turned it down to 375 when I put the muffins in to bake, then baked them for 20 minutes. They were perfect. I also sprinkled the tops with a little cinnamon sugar instead of plain sugar before baking. They got rave reviews at our house.

Beer Butt Rosemary Chicken

I've roasted chicken this way many times, experimenting with different seasonings each time. You can use whatever you have on hand - a can of beer, diet Coke, ginger ale - it doesn't seem to make a detectable difference in taste - it's the steam that the liquid in the can creates that matters I think. I also stuff the neck cavity with an onion or potato - something to keep the steam inside the chicken while it's cooking. This is a really good method for roasting a very moist and delicious chicken!

Yummy Roll Ups

I've been making these forever, and they are such a favorite with folks that I can't stop! I always cut the dill spears in half and remove most of the seedy part, roll them up tight, and then cut each cylinder into thirds for bite-sized treats. I've never found the need to use toothpicks to secure them - the cream cheese inside keeps them from coming apart.

Lentils and Rice with Fried Onions (Mujadarrah)

This was pretty good, but I think some tweaking would make it better. Definitely needs at least a Tbsp of cumin, a pinch of cinnamon and lots more onion. I used two really big ones, and next time I think I'll use four, some for mixing in with the lentils and rice, and some for topping. I used about 3 1/2 cups of chicken broth for the liquid, but I could have used a little more and cooked the lentils a bit longer. I used the long grain white rice, but next time will try Basmati and see where that takes it. Definitely plain Greek yogurt for the topping. All in all, a nutritious and tasty dish.

Awesome Baked Sea Scallops

I gave this recipe a try because of all the good reviews, but there was just too much butter and oil in it for us - it was more like a 'baked stuffed' dish - really, really rich, and it left us with that greasy feeling. I would suggest cutting way back on the butter, oil, garlic and bread crumbs to lighten it up. The scallops were just lost in all that 'stuffing'.

The Best Vegetarian Chili in the World

This is a delicious, healthy meal. My husband is a chili fanatic - and he loves this. He adds extra hots, but this is just right for me the way it is. I replaced the garbanzo beans with navy beans as a personal preference. Then I crossed out the word "Vegetarian" and added ground turkey breast in place of the veggie crumbles, as we are carnivores in this house! Everyone who tries this wants the recipe. Thanks for sharing!
