Fresh Spinach Salad

Reviewed: Jan. 7, 2014
Excellent recipe, and I didn't even have any bacon! The dressing is very good! I used hard boiled egg, feta, craisins, sliced almonds. Even my husband who doesn't like spinach salads ate it all. Can't wait to try it with the bacon :)

Chicken Salad

Reviewed: Apr. 2, 2012
Very tasty! We used our left over grilled chicken, left out the water chestnuts, added craisins instead of grapes, and used light sour cream/mayo combo instead of just mayo. EXCELLENT on a croissant! Def a keeper!

Teri Tips

Good flavor and easy to make, but we found it very salty for our taste....and I even used low sodium soy sauce. I will definitely cut back on the soy sauce next time

Chicken Enchilada Slow Cooker Soup

Reviewed: Sep. 10, 2011
This soup was to die for! Like others, I added 1 can rinsed black beans, 1 can Rotel (instead of green chilies alone), and juice from 1/2 a lime. I also used fresh tomatoes instead of canned. I put the chicken in still frozen, and by the time I was home from work it was perfect. After shredding I had to leave lid off crock pot so some of the juices would evaporate...served with tortilla chips, shredded cheese, and a bit of sour cream - YUM! Everyone is already asking when we can make it next!

Zesty Slow Cooker Chicken Barbecue

Reviewed: Aug. 16, 2011
Yum! Like others, I cooked the chicken in the slow cooker with 1 can chicken broth 4 hours on high, then drained and shredded. The sauce wasn't too runny - just perfect! The combo of ingredients is a bit strange, but it tasted great on a toasted hoagie, and the leftover to make a bbq chicken pizza (great way to "hide" leftovers.) If you use a BBQ sauce you like, then you'll love this recipe. We used Gertie's bbq sauce (comes in a jar) - delicious!

Mom's Best Macaroni Salad

Reviewed: Mar. 28, 2010
Excellent pasta salad! I didn't have a green pepper, but used black olives and diced pepperoni instead. Like others, I left out the sugar and it was pleanty sweet without it! This is just the recipe I was looking for - far better than italian dressing pasta salad. Great to make a day ahead of time. Thanks!

Tangy Grilled Pork Tenderloin

Reviewed: Mar. 9, 2010
Didn't have quite enough honey, so added a little honey dijon mustard too. Like others, increased the amount of chili powder. Marinated 4 hours, then grilled on indirect heat. They were perfect!!! Everyone raved, this will be added to the regular meals.

Feta Cheese Ball

Reviewed: Dec. 8, 2009
GREAT! Like others, I cut the amount of olive oil to 1-2T, and halved the dill and oregano. I used 3 garlic cloves, and thought it was a little strong, so will probably use 2 next time. I love feta (which is why I picked this recipe) so I doubled that. It was so good, and different from other cheese balls. It was a big hit at the party!

Wonderful Banana Cake

Reviewed: Nov. 11, 2009
I have made this several times, and it is always a hit! Very simple, and what a great way to use up ripe banannas. Topping this with pudding/cool whip icing is really what makes this cake though (use 1c milk and 1 package instant vanilla pudding then fold into 1 container cool whip). Thanks for this great one!

Peanut Butter Apple Dip

Reviewed: Nov. 11, 2009
I made this for a work pot luck and it was a huge success! I used about 3/4 cup brown sugar instead, and added 1 teaspoon vanilla. We used much more than 3 apples, so cut it back if you don't want a lot...even one batch as written though will go quick :) Would be great mixed with chocolate too

Fettuccini Tomato Rustica II

Reviewed: Nov. 11, 2009
SO delicious! I too decreased the olive oil to about 1/2 cup (just as much needed to coat the pasta when mixing in the sauce). I didn't have ricotta cheese, but used cottage cheese instead and couldn't tell a difference. Will be adding to our favorite dishes...Thanks!

Onion Rice

Reviewed: Jul. 28, 2009
Excellent side dish - went great with our kabobs. Recipe called for too much pepper, so like other reviews I cut that way down. Also added some minced garlic and thyme. We will definitly use this again

Scrumptious Strawberry Shortcake

Reviewed: May 27, 2009
So easy and so delicious! Like many other reviews I didn't use cream of tartar (because I don't have it), and used 1% milk instead of cream. You couldn't tell a difference and my husband loved it. After mixing I kneaded in the bowl and formed round dough balls and placed in a round pan. I wet the top with tiny amount of milk and sprinkled with sugar. Some sliced strawberries with powdered sugar, vanilla ice cream and whipped cream made this perfect!
