Ratatouille

Really tasty. I didn't follow the recipe exactly, but pretty close. I used thyme and basil, which was nice, and these veggies need a fair bit of salt. Easy and fresh - I'll make it again.

Tomato-Cream Sauce for Pasta

Delicious and flexible! I didn't have cream, so I used 2% milk - cooked and reduced it by half - and it turned out wonderfully. I also love garlic, so after sauteing the onions a little I threw in 5 cloves of sliced garlic and cooked until soft. I didn't need more or less salt or spices. I served it over cheese tortellinis :) Yummmmm!

Dilly Cucumber Salad

This is a great recipe, but it needs maybe half the sugar. My grandmother made a salad like this every Christmas and I could never figure out how to make it. The brining process is the secret! The cucmbers and onions (I added them) get nice and soft.

Banana Date Flaxseed Bread

Excellent and flexible! I only add ground flax and no dates cuz that's what I have on hand. I also throw in walnuts, cranberries and a bit of kefir. I smear pb on top too. Good recipe as is or if you want to get creative.
