Too Much Chocolate Cake

I rarely take the time to rate recipes, but I've been using this for years and it's ALWAYS a winner. Best results for the least amount of time/effort when you're in a crunch. I also use coffee for water and mini-chips, but I'm sure it's great as-is. I have made this as cupcakes (~30min) and mini cupcakes (~22mins), birthday cakes, mini-loaves, etc. Recipe doubles and triples wonderfully. Cream cheese icing works well if you want to decorate. The ONLY downside is I can't share the recipe--it would ruin my street cred to see boxed mix ingredients. :)

Chile Garlic BBQ Salmon

This was absolutely fantastic! I'm a healthnut, but the recipe is pretty light as-is, I used Spelnda brown sugar and a touch less of it and marinated the salmon in it for 3mins prior, but otherwise left the recipe alone. I put it in the oven at 425 for 20mins covered and then 5mins uncovered and it was light, flakey, and perfect! This is also great for mixed families where some like more sauce than others, I was able to give my better-half a bit extra to use on his potatoes and keep mine a little lighter. Fantastic! A keeper for everday and to impress guests with for sure!

Lisa's Chocolate Chocolate Chip Cake

HEALTHY VERSION WINS TASTE TEST! I made 2 cakes and brought them to work for a blind taste-test (they were marked only as 'A' and 'B'). I made the first as printed with the only change being 1/2C oil, coffee instead of water, and chunks of semi-sweet chocolate for the chips. The other (healthified) with with equal swaps of sugar free chocolate pudding, no sugar applesauce for oil, egg white for whole eggs, greek yogurt instead of sour cream, no chocolate chunks and coffee instead of water. Not only did 50% of tasters guess incorrectly on which was healthy, but 100%said the healthy version tasted better! It was awesome to do a true blind taste test for something like chocolate cake! Score one for the fat-cutters! :)

Butternut Soup

I make a version of this all the time, but prefer to buy the pre-squashed squash in the freezer aisle to save a good 20mins! :) It's with the other veggies, but usually in a block format about the size of a book :)
