These were fantastic! I brought them to work and my co-workers couldn't get enough. I'll definitely make them again. The cream cheese frosting that I used was a perfect compliment!

Honey Baked Chicken II

I absolutely LOVED this recipe! It was so easy and it made for a great dinner with my hubby. I poked holes in the chicken in order to let the sauce soak in and it was really moist when it came out of the oven. I think that next time I might follow Colleen M.'s advice (bake covered at 350 for an hour, turning halfway through. Remove foil, bast again, turn oven to 400 and bake skin-side up for an additional 20 minutes) to get the skin a little crispier. All in all, it was very good and I'm certain I'll make it again.

Roasted Chickpeas

As suggested by another commenter, I used cooking spray instead of oil and seasoned them with garlic salt after they were done cooking. I had to cook them slightly longer for all of them to turn out crunchy, but my hubby and I both enjoyed them and I'll definitely be trying them again in the future with different seasonings.

Slow-Cooker Chicken Tortilla Soup

This recipe was great. I followed the advice of others and added whole chicken breasts to the soup, which I shredded towards the end of cooking. Next time, I'll use a spicier enchilada sauce for a little more of a kick.

Mock Tuna Salad

Fantastic! I was fully expecting this to taste nothing like tuna salad, but I was wrong! The combined flavors are wonderful. Thanks for such a great (and easy!) recipe.

Asian Tuna Patties

These were fantastic! I was looking for an easy way to prepare canned tuna besides using it for tuna salad and this recipe is definitely it! I used sesame-flavored chili oil for a little kick and served them with a side of steamed Asian veggies from the freezer section in the grocery store. Wrap them in a large lettuce leaf and you've got a great meal!

Very good! My husband said he wouldn't have even noticed that they were vegan if I hadn't said anything. I topped them with a vegan chocolate glaze and would definitely make them again! :)

Breaded, Fried, Softly Spiced Tofu

So good! This is about the only way that I cook tofu anymore. I simplify it a little bit by freezing the tofu before thawing it to use (for a better texture). After being pressed & cut into strips, I bread it in a mix of flour, garlic powder, & chili powder that I kind of eyeball and fry it in a bit of olive oil. When done cooking, I throw it in a bowl, pour some sauce over top, cover it with a lid, and toss to coat. YUM! The biggest hits have been Sweet Baby Ray's mild buffalo sauce & Panda Express' orange sauce. Serve with some rice & you've got a great, filling meal!
