Chicken Pot Pie I

Reviewed: Sep. 4, 2012
I've made this twice and twice my family left absolutely no leftovers. I used the refridgerated ready to use dough for faster prep. I did use 2 cans of cream soup to make it creamier as well as chicken gravy in place of milk, either way works though. I tried the canned veggies and then tried fresh which i prefered more. I also chopped raw chicken, browned it lightly, then made the pie, letting the pie cook slower. This allowed the pie to brown nice and even and didn't overcook the chicken as I found precooked chicken became too dry when used in this receipe. Also added italian seasoning for a flavor boost. Will continue to make this on a regular basis. Easy and tastes wonerful! Easy to modify to fit your family's preferences which is a major bonus in my house!

Chocolate-Berry No-Bake Cheesecake

Reviewed: Jan. 1, 2013
I've made this a few times and even changed it up a little. I skipped the chocolate and berries, used plain cool whip( the dips kind isn't available where i live)and a plain graham crust to make a plain cheesecake pie. Last time i added blueberry pie filling while blending. Amazing!! It tastes like a cheesecake but is so simple to make and you can add whatever you like to fit you! This is a regular go-to recipe for me now and the kids and husband keep requesting it!

Salsa Chicken

Reviewed: Jan. 2, 2013
I made this but i changed it a little. I rolled the chicken breasts in taco seasoning/taco sauce i used from a boxed dinner kit(was running short on supplies) then put the chicken in a baking pan that had a layer of corn and mushrooms. On top I layered diced green bell peppers and very chuncky salsa. when the chicken was almost done i put a layer of mexican cheese blend(so much better than plain chedder)on top, melted it until done. Served this with seasoned rice and soft taco shells. This was a huge hit with the family! The reason I give this a 5 star is because this recipe is a great starter recipe for those new to cooking. You can add or subtract to your liking or skill as you go along! Thank you Faye for sharing a great recipe!

Chicken Breasts Supreme

Reviewed: Jan. 15, 2013
Was very good! I altered it due to certain items that the kids and husband just won't eat but it turned out fine. The reason I give it a 5 star rating is this: it's a perfect recipe for the beginner cook. I'd have given anything for this recipe when I was just starting out!! Best of all as your skills improve you can take this recipe and add or substract or substitute to make it your special dish, making it as casual or fancy as you like. My family enjoyed this very much and i will make it again. I will likely even try adding something different next time just to see what happens!

Grilled Chicken Burgers

Reviewed: Mar. 6, 2013
Loved this recipe! Changed it a little: left out the seasioning and onion/garlic(not kid approved in my house) and saved the tomato to top the burger. Also served them on whole wheat sandwich thins with a thin slice of cheese and a side of garden salad. These were very filling! Even my husband who can plow through 2 regular hamburgers barely managed to finish 1 of these. And the kids ate them so I will be serving these again! I might even add some different/more veggies as this is a great recipe for sneaking them in without anybody noticing!

Leftover Dog Pile

Reviewed: Feb. 10, 2013
What a cool way to use up the leftover chili! I was a little worried the kids would turn their noses up at it but they loved it. My husband went nuts over this dish asking to have it again after chili night! Thanks for the great idea!

Slow Cooker Manly Stew

Reviewed: Aug. 21, 2013
As a recipe on its own I'd give this a 2 star rating but as a base this is ok. I added half a bag of frozen mixed veggies, 2 cans of corn,2 cans of mushrooms,1 can of diced potatoes(all canned veggies as low or no sodium as I could get and well drained)I skipped the onion soup mix(don't like onion)I didn't have any cheese soup but I did have a can of chedder broccoli potato chicken soup so I threw that in instead. I only had beef round which worked nice but I think next time I'll use chuck roast. I also added a couple of tablespoons of Italian seasoning to the pot for flavor. When it was done I served it over mashed potatoes. The husband and I loved it, the kids poked it so more leftovers for me and the husband. I used as low sodium soups and veggies as I could after reading the reviews and with the lower sodium items it didn't taste too salty. I had to add veggies because a stew to me is not a stew without some vegetable in it! It turned out very thick and filling. I will be making this again especially during the winter!

Broccoli Chicken Casserole I

Reviewed: Jul. 14, 2013
As a base to a more complex casserole I'd give it 4 stars but as is it's just a 3. It's a good recipe for a beginner cook but for someone like myself who's made a casserole or two in their time it's just too plain. After reading several reviews I went to work. I ended up with something totally different than the original but here goes: I chose not to layer the ingredients after reading the other reviews. In a big mixing bowl I added cubed chicken (5 small breasts)but I chose to leave it raw(I find that precooking meat makes it too dry later on) then I added 2 generous Tablespoons of Italian seasoning, 1 fresh green bell pepper, 2 small cans of mushrooms, some broccoli, cauliflower, and carrots from a frozen mix(still frozen), 1 can of cream of chicken and a can of Campbell's broccoli-chicken-cheese-potato soup. I didn't have cream of mushroom and I never cook with mayo!! Once it was all well mixed I put it in a greased baking dish and put it in the oven at 350 for half an hour. Then I pulled it out and added a layer of Mexican blend shredded cheese and a box of ALREADY PREPARED Stovetop Stuffing(that I prepared while I waited). Tossed it back in the oven until the cheese was melted and the chicken just cooked through. In the end it was nothing like the original recipe but it tasted pretty good. The kids wouldn't touch it so there were plenty of leftovers for my husband and me for lunches.
