Avocado Stuffed Yams

Like everyone else, I was skeptical, but I tried it because I love the two items alone. I also added some tomatoe to the avocado and a little jalapeno to make a more traditional guacomole.

Moroccan Chicken and Whole Grain Couscous

I made this last night and it was delicious! Like many people, I doubled the spices and cut the chicken broth down to a 32 oz box. I used some extra broth in place of half the water when making the couscous, it gives it a nice flavor. Very good, and I will definitely make it again.

Best Cream Of Broccoli Soup

This was delicious! I kept mine a little chunky like others suggested, and only used a tiny bit of celeriac, because I am not the biggest fan of celery but had some leftover. I also added a little garlic because I love it! It was very tasty and I will be making it again.

I liked this quite a bit. I mostly followed the recipe but took out some of the chicken in favor of adding mushrooms and spinach. I also went the slow cooker route. Very good.

White Chocolate Macadamia Nut Cookies III

Really good. I followed the recipe almost exactly. I just left out the almond extract and did a full tsp of vanilla. Cookies were perfect consistency, texture, flavor. Will make again.

Roasted Butternut Squash and Garlic Lasagna

SO good! I did add some onion in with the garlic. I also left off the whipped cream. Instead I saved a very small amount of the squash sauce for the top layer and put a bit a fresh mozzarella on top. Will make again and again!

Doro Wat - Ethiopian Chicken Dish

Flavor and spice are good, but I forgot to mention that traditionally this recipe is made with bone-in chicken thighs and legs. This would increase your cook time slightly. Just make sure the chicken is cooked through and adjust the water amounts accordingly.

Sausage-Stuffed Squash

This was pretty good, though I actually changed it quite a bit. I left out the sour cream and parsley, and added small apple pieces. Went well with the sausage.

Lemon Garlic Tilapia

Turned out pretty tasty. I will definitely make it again. I did use less butter and added some olive oil to compensate. I didn't use as much lemon as suggested but I think I will next time as I didn't have much of a lemon flavor in mine.

Red Lentil Curry

This was a really good lentil curry. The curry paste I used was quite hot, so I will probably tone it down just a little next time. I also added some mushrooms, courgettes, and chickpeas for fun, and some fresh cilantro on top. Delicious.
