Cinnamon Swirl Bread

Reviewed: Oct. 23, 2009
This is incredible bread (more like coffee cake really)! I made mine in a bundt pan and it turned out amazing. I only had to cook it for about 30 minutes. I subbed the applesauce for the oil and was surprised how light and airy the texture was. Many times when using applesauce the texture gets rubbery, even when I am careful not to overstir. But not this time! My kids love it! I used turbinado (sugar in the raw) for the swirl mixture. I also used 1/2 brown sugar and 1/2 turbinado sugar for the bread. (I very rarely use white sugar for anything). We ate ours about 10 minutes after it was out of the oven. This recipe is definitely a keeper!! I may try to sub in some splenda next time to cut down on the sugar and calories.

Perfect Pumpkin Pie

Reviewed: Nov. 11, 2010
This is the best recipe for pumpkin pie. I have been using it for years. I always get asked what is in it, and it is the sweetened condensed milk that makes it so good. Can't go wrong with it. Better than the Libby's recipe ;)

Best Bread Machine Bread

Reviewed: Nov. 14, 2010
This is my second loaf of bread in my new breadmaker. The first was a recipe from the manual that came out bland, tough and dense. This recipe makes an amazing white bread! I too added an extra 1/2 tsp salt and an extra tbsp of sugar. It rose within a half inch of the top of the breadmaker. The kids love it! Tastes like the homemade white bread I remember eating as a kid. I am going to try some substitutions such as applesauce in place of oil as one other reviewer did to cut down on calories. I think I will also try using honey instead of sugar too since it is better for you, and probably adding in some ww flour in place of half of the bread flour. But don't get me wrong, the recipe is awesome as it is. I just try to use healthier substitutions when I can. Thanks for posting!!

Easy Sugar Cookies

Reviewed: Nov. 18, 2010
I must admit, the recipe is a bit wonky for some reason. I measure everything very precise and I too had crumbly dough. I added another 1/4 of butter which fixed it. My butter was completely soft, so that wasn't the problem. My egg was on the small side so that could have been part of the trouble. But after adding the extra butter, the dough was soft and easy to work with. We rolled them into 1" balls and cooked them for 10 minutes. Turned out great. Excellent flavor! They are cooling right now, we will be frosting them soon!

Ruth's Grandma's Pie Crust

Reviewed: Dec. 27, 2010
Very easy to make, tasted good. Recipe needs to specify to use ice water and to refrigerate for 30 minutes before rolling. Also make sure you blend in the shortening as little as possible so that you can still see small chunks of it. Don't over mix, will make for a tough crust.

Pecan Pie V

Very good, easy to make. I put halved pecans on top for appearance, but that made it very hard (and messy looking) when sliced. Not sure that I would do that again.

Balsamic Roasted Red Potatoes

Reviewed: Dec. 27, 2010
Everyone really liked these except for me, but I am not crazy about vinegar. The smell about knocked me over when I checked on them in the oven ;) That being said, they were gone at the end of the party and there were other potato choices there too. People raved about them. I think I will cut the vinegar just a little next time. And I used about 3-4 pounds of potatoes.

Tasted great, but I did have a lot left over. Nice twist on traditional cranberry salad.

Slow Cooker Stuffing

Reviewed: Dec. 27, 2010
This tasted great but mine was mushy. I thought I was being careful to not add too much broth but apparently I did (and I only used 2 cups). Will try again with store bought bread crumbs. I think mine were too fresh. Flavor was wonderful though.

Sweet Dinner Rolls

Very good. I made clover leaf rolls by placing 3 balls each in a muffin tin. I let them rise a couple of hours. They were very impressive and tasted great.

Very good. People said they liked it better than the mushroom soup version. Mine was a little watery and it looked like the sour cream curdled a little.

Peanut Butter Bars I

Reviewed: Apr. 18, 2011
These were really good, but mine were much thinner than pictured. I made everything as listed except I used 3/4 cup butter instead of 1 stick. I did make them in a 9x13 as listed. Not sure why mine were so thin. They are really rich though, so being thinner is not all that bad.

Kolaches I

Reviewed: Apr. 19, 2011
My family is Czech, so I make these often. I use softened butter instead of shortening. Using bread flour instead of AP makes for a lighter, flakier kolache. After you put the yeast in with the milk you need to let it sit atleast 10 minutes until it starts to foam. Also the milk temp should be close to 110 degrees (2 min in the micro is what it takes for me). Too hot and you kill the yeast, not hot enough it will not activate. Add about 3 cups of flour, form a ball, then take it out of the bowl and work the rest of the flour in on the counter. Add additional flour if necessary, but it should still be a little sticky. The reviewer that said this is a batter did something terribly wrong. This is a bread dough type of consistency. Don't "flatten the balls". Instead take your thumb and index fingers on both hands and push the dough out from the center. This will create a deep well with tall sides so that the filling doesn't ooze out. Then I brush mine with melted butter and fill with about a tablespoon or 2 of cherry pie filling (or whatever you like). I am impatient on the 2nd rise, so I place the kolaches in the oven with it on low (170 degrees) for 20 minutes. That will make the second rise go much faster. Then preheat the oven to 375 and bake for about 15 minutes. Should be light golden. I get the best results with an airbake cookie sheet. Dark colored ones will burn the bottoms of the Kolache. This recipe makes about 40 kolaches, not 72. I get 12 per cookie sheet.

Easy Grape Salad

This salad was the talk of my party! You wouldn't think a simple grape salad would generate so much excitement, but it did. I made it as written, but used chopped pecans instead of almonds. LOVED IT!

BLT Pasta Salad

Reviewed: Jan. 23, 2012
This is one of the salads I make that I get a lot of request for. It is very good. As it is written it serves a lot more than 10, more like 20 people. I use bowtie pasta, 3/4 cup bacon ranch drsg and 3/4 cup mayo instead of all ranch. I also used green onions instead of regular onions. Always a hit!
