Best Butternut Squash Soup Ever

This makes a delicious soup. I doubled the recipe and for the second serving added cream for a nice change. I can't get allspice here, so added fennel instead. Also, there is no need to peel the squash - a terribly fiddly process - as the skin dissolves and actually adds a nuttiness to the flavour. We've had this a few times and it's now a favourite in our house.

This is fantastic!! These are all items I keep on hand, so when friends dropped in recently I prepared it for them, along with the baguette of fresh bread I had happened to buy that day. The first time I made it I thought it a bit tame, so I doubled the spices. We love it, and even make a lunch of it on slices of fresh baguette from the local padaria.

Special Irish Beef Stew

This is truly the best Irish/beef stew recipe I've ever had. I added salt and pepper when browning the meat and some oregano later on. I used Guinness, which added a great substance. My husband said it was 'fantastic' and 'gorgeous'. He's English and loves his Guinness. Even the dog licked the plates over and over. I never thought it was bitter at all, but found it very smooth and rich. Instead of tomato puree, I used tomato sauce (tinturada) and rather than cornstarch (we live in Portugal) I mixed flour and water to thicken the gravy. The result was a very rich, thick and delicious stew. Thank you for a great recipe, which I will use again.
