Mexican Lasagna II

Only giving it four stars b/c I had to make a few modifications. I seasoned the meat before frying it and tossed in some garlic and onions (white not green). Then added 1/2 a packet of taco seasoning to the meat with only one can of refried beans and two cans of diced tomatoes with chiles. I drained the juice from one can of diced tomatos but used the juice from the second can to loosen up the refried beans. Side note: this meat mixture is absolutely delicious! I almost ate this in a tortilla without bothering to finish the lasagna! To layer my lasagna I did the following in 9x13 lasagna pan: 1. Tortilla, 2. Meat mix, 3. Enchilada sauce, 4. Cheese (mexican blend), 5. Tortilla, 6. Meat mix, 7. Enhilada sauce, 8. Cheese Because of the juice from the tomatoes I could have skipped the enchilada sauce but it still added a good flavor. Made the lasagna a little wet though. Also, I ended up using 4 cups of cheese instead of the recommended 3. Overall, WONDERFUL recipe. Boyfriend said he could smell it cooking from the parking lot of our apartment complex and couldn't wait to come in and eat. We have very different tastes in food but both of us give this recipe a thumbs up.

Flavorful Beef Stir-Fry

I love this recipe! Super fast. I made my own few adjustments though: I seasoned the meat before cutting it up and soaking it for about 5 minutes in soy sauce (only 5 tblspoons), sugar, water, red pepper flakes, and garlic. I then took the meat out of the sauce, added the cornstarch (only 1 tblspoon), then cooked the meat in half of the sauce. I then added my veggies (used the frozen kind in the bag), covered, and simmered the dish for about 4 minutes. I then added the rest of the sauce and let it sit for a little bit. Absolutely delicious!

Meatloaf With A Bite

This was a really good recipe! I used 99% fat free ground turkey instead of beef, canned diced tomatoes with green chiles instead of salsa, and seasoned the turkey before adding the other ingredients. I also added frozen onions, celery, and bell peppers. I'm lactose intolerant so I omitted the mozarella and just plain forgot the egg. Even with all my modifications this turned out delicious. It was "wet" but after baking for 30 mins I poured out the extra liquid then let it bake again for about 20 more mins. Turned out firm and tasty! Definitely will try again.

Chewy Coconut Macaroons

This recipe is very easy to make and tastes delicious! I shortened the bake time to 15 minutes, use a foil lined pan sprayed with PAM, and everything turned out great. These cookies are VERY sweet due to the condensed milk. I noticed that the batches I made after letting the dough sit in the fridge for a few hours tasted much better. Also, the taste of the condensed milk gets less powerful as the cookie cools. Overall, great recipe!
