Catherine's Spicy Chicken Soup

Great base recipe. Serve with melted cheese and tortilla chips. I added fresh jalapeno to the garlic and onion mix, as well as lots of black pepper. While you simmer it towards the end keep adding what you want to make it taste good. I used Frank's Red hot as well to add flavor and thickness.

Pork Marsala

Oh my goodness. This was SO good. The only thing I did differently here was remove the pork chops after browning, and cooking the sauce on its own for a bit. I returned the pork chops to the skillet and simmered it with the sauce. Wow. Served as other suggested with red potatoes, and some spinach on the side. Will definitely make for company.

Chicken Danielle

This was delicious. I cooked everything in one pan, as well as added garlic and onion before I popped it in the oven. I used half the amount of butter, then sauteed the mushrooms, garlic, and onions in some flavored olive oil. Also, half and half works just fine. The linguine pasta holds the sauce really well, it's perfect.

Burgundy Pork Tenderloin

The sauce was excellent. As other reviews suggested, it would be good to add another packet of gravy. The celery is completely unneccessary, and adds nothing to the dish. I suggest bell peppers and mushrooms, but you can sautee that separately and add it at the end. My veggies didn't look right when all was said and done with.

Lemon Chicken Piccata

This was delicious. The only thing I didn't do was add the lemon slices. I'd rather add those at the end as a garnish. I also added some corn starch and to thicken it up, and some white wine for flavor. Next time I think I'd like to add a little cayenne pepper, but as is...is wonderful. I will definitely be making this for company.

Kung Pao Chicken

This was good, it was just too spicy for me. Usually I add more spice...so I am not sure what was wrong. I think the 1 oz of chili sauce caught me off guard. 1 tblspoon would be enough. I also doubled the sauce. Don't get me wrong, it was good....just overpowering with the spice.

Angela's Awesome Enchiladas

Fabulous. It's a lot of work to boil and shred the chicken. Getting a ready made rotissiere chicken would work just fine. I really liked the consistency of the filling, as well as the flavor.

Stuffed Jalapenos III

These are delicious. I did whip some cajun seasoning with the cream cheese the second time I made them to add more flavor, as well as soak the jalapenos so they wouldn't be so hot. These disappeared in an hour when I brought them to a party, and I will definitely be asked to bring them again.

Slow Cooker Chicken and Dumplings

This was absolutely amazing. I used chicken broth instead of water, and only one can of biscuits. I also added spices, seasoned salt, paprika, and parsley. Instead of two cans of cream of chicken, I used one can, and another of cream of celery. There were a lot of biscuits, and not enough gravy. Next time I would add more broth, or possibly use another can of soup to have more liquid. It still disappeared in minutes, and I was very impressed with how easy this was. I will definitely make it again.

Simple Country Ribs

Very tender and tasty. This was an easy way to cook ribs, I don't have a lot of experience with it. I was skeptical about boiling the ribs beforehand, and using bbq sauce, but that's what made it wonderful. I made the recipe exactly as written, and was impressed.

My fiance ate this in two minutes. I made it according to the recipe, and only broiled it for 5 minutes at the end to crisp up the top. I will definitely make it again.

Slow Cooker Beef Stroganoff I

So amazing. I did follow the advice of some and made some changes. I added salt and pepper, onion soup mix, and a boullion cube. Also, I added fresh mushrooms, and served it over egg noodles. I also cooked it on low for 6 hours. I was a little paranoid about cooking it too long, but I think next time I will cook it longer because the meat was a little tough. The flavor was really good, and I had the leftovers the next day. This will go into the regular rotation.

Chicken Enchiladas I

I didn't use tomato sauce, and just used bottled salsa, and enchilada sauce. I found the filling way too soupy, and it was a pain to assemble the enchiladas. It made a mess. However, it was really tasty, so it was hard to know how to feel. The next time I made them, I let the filling sit for awhile to thicken, and it was a lot easier to make the enchiladas.

It's Chili by George!!

This was great! I didn't add the tomato juice, I just used bottled salsa as someone else sugested, and diced tomatoes. My fiance loved this because he doesn't like spicy food, but I would add some red pepper next time. I also served it with tortilla chips, sour cream, and fresh avocado.

This is so amazing! I put a little more chili sauce, and added more fresh parm at the end. It was absolutely delicious. I believe next time fresh garlic would be a great addition. Thanks LA Girl, I will definitely be bringing this to the next work pot luck.

Easy Tuna Casserole

This was good. As others suggested, I added another can of tuna, and mushroom soup instead of chicken. I also added milk, but will omit that next time, it was too liquidy. I also added salt and pepper before baking for extra flavor. Delicious!

Easy Olive Martini Chicken

I have made this about 4 times in the past two weeks it is so good. I add some chicken broth to the sauce as well as bit of corn starch to thick it up and pour over the chicken. I served with garlic mashed potatoes.

Beef Stroganoff III

This was pretty good. I did marinate the meat in wine beforehand and use fresh mushrooms. My only suggestion would be to use top sirloin instead of chuck roast. Amazing!

Uncle Howie's Favorite Artichoke Dip

Great recipe! I added a little more cheese and then added the juice from the jar of artichokes to give it a little more flavor. Then I added salt and pepper. I am taking this to a party so I won't, but I believe adding tobasco sauce would be awesome to add a little kick.
