Zucchini and Eggs
Have been making this for many years...actually grew up on this type of egg dishes. You can use almost any vegtable with eggs. I love to stir-fry zucchini, red & green sliced peppers, onions, garlic, sliced carrots in some olive oil, adobe seasoning, chick boullion & some water from cooked angel hair pasta. Pour veggies over pasta...makes a great meal. ( You can stir fry some chicken breast with veggies. YUMMM!!!

Savory Vegetable Stir-Fry
I've been making this for quite awhile now & my family loves it. I make Angle Hair Pasta & serve this over it. It is so yummy!! Sometimes I will stir fry cubed boneless cubed chicken breast first before the veggies. You could serve it with shrimp too. YuMM!! My Grandkids have requested this from me. Enjoy!!

Egg in a Hole
WOW, I almost forgot about these. My Mom made these for us back in the 1940's. It certainly brings back alot of memories. We didn't use bacon drippings, we butteres both sides of the breack + holes. Mr grandkids love them now. YUMM!!
