Pumpkin Cheesecake in a Gingersnap Crust

I made this cheesecake yesterday and it turned out wonderfully. As a matter of fact, my daughter didn't want to go to school today because she didn't think there would be any left for her when she got home. I made a few changes, though. I used 4 packages of cream cheese instead of just 3. I also threw in about 1 teaspoon of pumpkin pie spice with the other spices as well. I used a trimmed down turkey cooking bag instead of wrapping the pan in foil, and it worked much better in the water bath. The consistency of this cheesecake is much creamier than the typical cheesecake because of the pumpkin, although I did pat the pumpkin down with paper towel. It was wonderful. My best so far. Can't wait to make it for Thanksgiving. I think I'll do one with the syrup and one without, just to see if there is a difference. ;)

White Chocolate Blueberry Cheesecake

I made this cheesecake and it lasted about 10 minutes! I made a change in the crust, using crushed Oreos and butter, and it was wonderful! My b/f's family is always raving about their friend's cheesecakes and they told me I put his to shame! I was gloating, of course. I drizzled the top of this one with white chocolate instead of the blueberry sauce because not everyone likes blueberries. Wonderful. Can't wait to make again!!! i made it once with Hershey's white chips and they didn't melt, so don't use them, just an FYI!!

Dark Chocolate Cake I

I made this cake for my daughter's birthday and it turned out beautifully! I followed the recipe exactly exccept for the eggs, which I separated and then whipped the whites into soft peaks with a little of the sugar and folded in later. I frosted it with the following buttercream frosting: 2 c milk, 1/2 c flour cook until thick, then cool. Cream together 2 c butter and 2 c white sugar. Add cooled milk mixture and 2 teaspoons vanilla, beat until fluffy. I frosted the cake with this frosting and put sliced strawberries in between the layers and on top. Then I put cake in refrigerator for frosting to set up. Absolutely wonderful!!! Definitely my chocolate cake recipe from now on!!!

Black Magic Cake

I've made this recipe with a butter cream frosting for a friend's birthday. Now, everyone wants me to make this cake. For a little added decoration, I shredded chocolate on top.
