Cream Cheese-Filled Coffeecake With Fruit Preserves and Crumble Topping

Reviewed: Jun. 30, 2008
I made this with raspberry preserves, but I kind of drizzled it around because I like a little bit of fruit taste with each bite. I took it to work because I knew I wasn't going to eat the whole thing in one day. It was a hit. I am glad one reviewer mentioned the directions being wrong (thanks). I also have to agree that for my personal taste the cake batter was missing something. I used foil like the recipe said to, and I had no issues with getting it off of the foil. Thanks for the recipe.

Blueberry Muffins II

Reviewed: Jul. 6, 2008
The only change I made was that I added 1 teaspoon of vanilla. My husband absolutely loved these. I will definitely make again.

Simple Spinach Lasagna

Reviewed: Jul. 6, 2008
I pretty much cut this recipe in half, because my husband doesn't eat spinach, and I didn't want to eat on it for days on end. I used a glass loaf pan to cook it in, and cut back about 10 minutes of cooking time. This was an awesome recipe. I will definitely make it again, soon.

Mini Southwestern Corn Pup Muffins with Fiesta Dipping Sauce

Reviewed: Jul. 25, 2008
Really good recipe, made a few changes; less sugar, more "spicy" spices, and used the mini muffin pans, 1/8 hot dog ratio like other suggested. All in all a really good change up for hot dogs. Didn't try the sauce because I don't like taco seasoning.

Soft Oatmeal Raisin Cookies

Reviewed: Aug. 24, 2008
It was not what I was expecting. Could be my own fault, but I have never had a cookie turn out the way that these did. Thanks anyway.

This was an excellent recipe. I made some slight modifications, but I do that with all of my recipes. Thank you very much for the delicious recipe.

Mock Chicken Fried Steak

Reviewed: Oct. 9, 2008
Very good recipe. I substituted 1/3 c of saltines with Italian bread crumbs. Made a few slight alterations because I like spicy. Thank you very much for the recipe.

My Crab Cakes

Reviewed: Nov. 9, 2008
This is a great recipe I cut it in half. I only had Italian seasoned bread crumbs so I used those instead of ritz crackers. I also used about 1 T. minced onion and bell pepper. I can't wait to make this recipe again.

Nutty Pumpkin Muffins

Reviewed: Nov. 9, 2008
Excellent recipe. I did use some pumpkin pie spice as suggested by some other reviewers. I topped with cream cheese icing. I took these to work and people were very sceptical until they tried it. They were gone in a flash. Thanks for the recipe. I will make again soon.

Beefy Spanish Rice

Reviewed: Nov. 9, 2008
I was skeptical about this recipe, but I followed it exactly and I am so glad that I did. It was great. A nice change. Like another reviewer said, don't expect it to be spicy, it is more sweet. I enjoyed it, and will make again. Thanks for the wonderfully different recipe.

Hearty Ham Casserole

Reviewed: Nov. 9, 2008
This is an awesome recipe. The only addition that I made is that I added bell pepper with the onion. I also took another reviewers advice and added some of the cheese to the mixture before baking. I made this recipe last week, and I already have the ingredients to make it again VERY soon. Thank you so much for the delicious recipe. It was a nice change.

Fried Okra

Reviewed: Nov. 9, 2008
I left out the salt, and fried the okra in my deep fryer on 360 degrees. Tastes just like I would get in a restaurant. I loved it, and will make again. Thanks for the recipe.

These are awesome. I cannot believe how good these were. I normally am not a big fan of stuffed mushrooms. Thank you so much for a great recipe.

Bob's Stuffed Mushrooms

Reviewed: Jan. 8, 2009
I didn't use the italian seasoning, or dried parsley, and less (minced) onion (I am not a big fan). I took these to work and they were gobbled up quickly. I think next time though I might use chopped shrimp, just for a difference.

Corn Casserole I

Reviewed: Jan. 8, 2009
I used low-fat sour cream, a little less butter, about 1/4c onion, and I added about 1 tablespoon diced jalapeno. I cooked this in a 2 quart glass bowl which I believe made it a little "soggy", but next time I will use a flat square dish to "dry" it out a little more for my taste. Great recipe, thanks!

Roasted Potato Pizza Slices

Reviewed: Jan. 25, 2009
This was a wonderful change. I would have never thought to do this with potato slices. I didn't use onion or bell pepper (personal preference.) It is kind of messing, but aren't all the good "finger" foods...=)

Deep Dish Brownies

Reviewed: May 17, 2009
I took other reviewers advice and only used 2 eggs, substituted 1/4 C apple sauce for butter, reduced baking powder to 1/4 tsp, used a heaping 1/2 C unsweetened cocoa powder, added 1/4 C coarsely chopped dark chocolate pieces, and 1/4 C chopped walnuts. I kept it everything else the same. I cannot believe how good these turned out. I will never buy another boxed brownie mix. I have tried various recipes, but they always came out "cakey". I cannot express how good this recipe is. Thank you so much for the recipe, and the ideas from other reviewers.

General Tsao's Chicken

Reviewed: May 17, 2009
This is a great recipe. I have made it a couple of times, and slightly change it up, just for convenience, and to make it a little bit healthier. I would recommend cutting back the starch though. You can get the same results with much less.

Creamy Zucchini with Linguine

Reviewed: May 25, 2009
I halved this recipe due to the amount of ingredients that I had. I followed the recipe exactly, and I have to say that you can probably get away with decreasing the amount of oil slightly. I do think that a large amount is needed however. I tasted this before I added the parmesan and thought "oh this is not going to be that great". After I added the parmesan I had to resist eating it all right then. So for me the parmesan is what brings all of the flavors together and makes them complimentary. Thank you so much for the wonderful recipe.
