Great Grandpa's Garlic Pickles

These are so delicious - I can't stop eating them. They taste even better after a week. Many friends have asked me for the "repickling" recipe. Mmmmm!

Easiest Pot Roast Ever

Excellent. I followed directions exactly until I added 15 crushed ginger snaps an hour before it was done. It thickens the gravy and tastes awesome.

Crepes

An easy and excellent recipe. After flipping the crepe I put a slice of deli ham and a slice of american cheese on it, then folded it in thirds right in the pan a few minutes later. Great for breakfast, lunch or dinner. I also like them with fresh lemon juice and sugar sprinkled on them. So good.

Stovetop Granola

delicious and easy granola. I substituted 1/2 cup of the oats for rice crispies cereal. I also added a 1/4 cup of wheat germ and a cinnamon stick. I'll be making this often.

Golden Rum Cake

So good. And easy. The only rum I had on hand was Barcardi 151, so I used a quarter cup for the glaze. Definitely take the other reviewers' advice about using the pan to glaze the cake.

Avocado, Tomato and Mango Salsa

This is REALLY good! It's worth all the chopping. I added another tablespoon of lime juice, extra cilantro, extra garlic, and I didn't de-seed the jalapeno (I like my salsa hot). Also, it's easiest to use a vegetable peeler for the mango. Mmmmm...

Kung Pao Chicken

This is the best Kung Pao Chicken I've ever had. You should definitely double or triple the sauce. I couldn't find chile paste at the store, so I used asian chile sauce. It worked well. The dish was quite hot, but oh so delicious. I also doubled the peanuts and ground them coarsley. I served it over brown rice. I can't wait to eat the leftovers tomorrow.

Creamy Tomato Soup

Awesome soup. I make it often. I add 5 crushed garlic cloves, fresh basil and only use a quarter of the cream cheese. I put it all through the blender just before it's done. Serve it with a grilled ham & cheese for lunch or dinner. Delicious...

Guacamole

This was excellent! I used two avacados, one medium tomato, lots of chopped garlic and extra chpped cilantro. I squeezed and mixed in half the lime immediately. I squeezed the other half lime the next day to freshen it up. Works well... and oh so good!

Simple Whole Roasted Chicken

Surprisingly delicious. I filled the cavity with a quartered orange, lime, onion, and crushed garlic cloves. I doubles the spice (except the salt). I rubbed the chicken with olive oil before rubbing on the spices. I used one cup of chicken stock to baste. Mmmm.

Croutons

Easy and delicious. I didn't use garlic salt, but I added chopped fresh garlic, onion powder, and seasoning salt. I also halved the butter and added equal amount of olive oil. With these, who needs lettuce for a salad?

Slow Cooker Chili II

This is a great base for chili. I made some substitutions to make it to my liking. I omitted the celery and one can of tomato paste, but added a can of diced (drained) tomatoes and diced hot peppers. I drained the beans, but added about a quarter cup of coffee and a quarter cup of beer to the crock pot. The spice mixture included chili powder with dashes of ground cardamom, coriander, cumin, and baking cocoa. I serve it over warm corn bread. Delicious.
