Cranberry Chicken II

Reviewed: Jan. 20, 2014
It was edible. The only things I did different were using the jellied cranberry sauce and only one packet of onion soup mix. It had way too much onion and french dressing flavor and way too little cranberry flavor. The first night I would have given it three stars but when I ate some of the leftovers today I could barely stomach it. Not one I would make again. Ever.

Baklava

Reviewed: Dec. 21, 2013
I have a friend that loves baklava and I decided to take on the challenge for him. After reading the reviews, I made 1.5x the sauce and put it in the fridge to cool while I made the baklava. Some here said they added sugar to the nut and cinnamon mix but I didn't want it to be too sweet so I added just a small amount of brown sugar to it. I got it in the oven at 325 since some reviews said 350 was too high. Once it was golden on top I took it out and poured the cold sauce onto it immediatly. I had made sure to not make my cuts all the way through so the bottom wouldn't get soggy. I let it sit for a bit and then tried a bite. Heaven. I took some in for my friend and he said it was perfect and that I must be part Greek ;) He isn't one to sugarcoat the truth either, so I trusted him.

Aunt Teen's Creamy Chocolate Fudge

Reviewed: Dec. 21, 2013
This was my first time making fudge and it came out perfect :) I couldn't find the Fluff brand marshmallow creme so I bought the Kraft Jet Puffed instead. After reading the reviews I decided to keep the amount of butter the same but used 1.5 cup Hershey's Milk Chocolate Chips and 1.5 cup Ghiradeli 60% Semi Sweet Chips instead of 2 milk and 1 semi sweet. I let the pan heat up slowly as I stirred the first ingrediants together and then once it hit a boil I stirred like mad for 5 minutes. Once I poured the chocolate in and then the vanilla it was nice and smooth going into the pan. I let it set for an hour and a half before I tried it. It was set enough that it was easy to cut and get a square out but smooth and melty in my mouth. I had to get a glass of milk, lol. If you are looking for more of a normal fudge taste I would keep with the chocolate the way the recipe states to because with even just doing it half and half like I did you can really taste the semi sweet. It is delicious!

Cannoli

Reviewed: Sep. 17, 2013
If I could give this zero stars, I would. This tastes nothing like any cannoli filling I have ever eaten. I used top notch Ricotta, replaced Amaretto with Almond oil (as the owner of the Italian bakery I got the shells/cheese from stated - only one drop! a tablespoon would have you gagging). I kept having to add sugar to get any hint of sweetness, going by other recipes I also added some vanilla to try and help it. Nothing I added to this even helped it come close to tasting like a cannoli. I tasted the filling from beginning to end, starting with this recipe and then trying to doctor it with others on here.

No Bake Cookies V

Reviewed: Aug. 27, 2013
I made these last night. I used JIF Natural Creamy PB w/Honey and regular Quaker Oatmeal. I made sure after reading the reviews to do the rolling boil for no more/no less than one minute. After mixing everything together I then put it in a shallow cake pan instead of drops of cookies. It came out a little gooey, but so yummy and scrumptious, lol. I will make these again :)

Easy Chicken Cutlets with Apples

Reviewed: Aug. 13, 2013
One word - delicious! After reading the reviews about frying and using the oven and blah blah, I just decided to do the recipe as written. I did double it because chicken breasts I buy come in packs of 3 not 2. I had no issues with the breading come of like others seemed to, it came out perfectly golden in the pan. Once that was warming in the oven, I had to improvise with the sauce. I only had one apple and one can of chicken broth and no Marsala. To make up the difference in the chicken broth I added 2 ounces of white wine. I didn't worry about the Marsala. Once done I poured some of the sauce and apple chunks (I cut each slice into 2 pieces to make up for only having one apple) onto 2 of the chicken pieces and poured some of the sauce on top of rice pasta. It was yummy :) I will make this again.

Brown Sugar Meatloaf

Reviewed: Jul. 31, 2013
This came out great! I took the advice of other reviews and made the ketchup and brown sugar into a paste and put that on top of the meatloaf. I was also feeling lazy so instead of using an onion I just put in the equivelant amount of onion powder. It was moist and flavorful, I will definitly make again.

Simple Beef Pot Roast

Reviewed: Jul. 30, 2013
This was so easy and so delicious! I did make an alteration to fit my taste. I did not use celery but added potatoes instead and I also added some minced garlic on top once in the roasting pan. I cooked everything the way the recipe said too and the meat was practically falling apart, the veggies nice and soft. It was out of this world :)

Boilermaker Tailgate Chili

Reviewed: Jul. 28, 2013
This is my first time making chili aside from just using a chili packet and ground beef. It came out great! The only things I did different was to use low sodium chicken broth since I forgot to buy a can of beer. One of the other reviewers had done that so I figured it would be ok. That and I used real bacon instead of bacon bits. It had just the right amount of kick and a good flavor to it with the sausage and beef. The only thing I might consider next time is to cut out one can of beans. I like more meat and less beans.

Grilled Delmonico Steaks

Reviewed: Jul. 22, 2013
I cut the recipe in half (only cooking 2 steaks), ommitted the extra salt and pepper and substituted bbq sauce for the steak sauce. The marinade had a good flavor and the steaks came out tender and juicy. The only reason I gave this 4 instead of 5 stars is because the marinade overpowers the flavor of the steak itself. I will make it again, but I won't use as much marinade/marinate it for as long as I did (I made it this morning and cooked when I got home from work).

Taco Bake I

Reviewed: Jun. 6, 2013
It was good, it was easy. I wanted a little more kick so I only used half the salsa called for and added hot taco sauce. I garnished with romaine lettuce and black olives. It was missing something. I can't put my finger on it, but it was.

Famous Chicken Adobo

Reviewed: May 28, 2013
Easy enough to make, but it needs a bit of tweaking. The taste of soy sauce and vinegar are overpowering even after adding the 5 tablespoons of brown sugar suggested by other reviews. I used chicken breast cut into tenders and cut the time down to 30 minutes. They came out very tender and flavorfull, just not an enjoyable flavor. If I try again I will cut the soy sauce down and see if that helps, not sure what else to do.

Honeyed Pork Chops

Reviewed: May 12, 2013
These were super easy to make and I listened to other reviews and doubled the honey. They came out delicious but the only thing I would change is that a hour is too long. They came out a little tough. Served with Snow Peas that were drizzled with the marinade, it was a good dinner.

Pineapple Chicken Tenders

Reviewed: Apr. 28, 2013
I looked through the reviews and decided to try it. I doubled up on the marinade, adding a tsp of ginger and a tsp of garlic as some reviews had suggested. I used half the sauce for the marinade and the other half to put over the rice. I cooked my chicken in chunks in a frying pan and heated the leftover marinade with the pineapple chunks I got the juice from. Put it over some rice and was good to go. It came out pretty tasty, I would make it again. I will probably marinate the chicken longer next time. I had it in the fridge for an hour.

Salmon with Brown Sugar Glaze

Reviewed: Feb. 21, 2013
I had to use spicy brown mustard instead of dijon but it came out delicious! Another quick and easy recipe that I will use again and again :)

Baked Parmesan-Crusted Chicken

Reviewed: Feb. 21, 2013
I made this because it sounded quick and easy and I didn't know what to do with the chicken in my freezer. I cut up the three breasts into medium sized chunks and then dipped them. I had to use dried herbs (1 tsp dried = 1 tbsp fresh) and a couple pieces came out a little too "herbie" for my taste, I might use less next time. The only downside I saw to this recipe was waste. I didn't want to pour the remaining butter into the pan so it got tossed, and there was quite a bit of breadcrum mixture to throw away as well. All in all, I will make it again. It was tasty and easy.

Sopapilla Cheesecake Pie

Reviewed: Feb. 19, 2013
After watching the video and reading alot of reviews, I decided to go for it. I did exactly as the recipe stated with the exception of using regular vanilla because I couldn't find Mexican. The prep took a little longer because I have no hand mixer and just mixed everything really good with a big metal spoon. I didn't need a rolling pin for the crescent roll sheets either. For the honey, I didn't measure it, I just drizzled it out of the honey bear. All in all, simple to put together and tastes delicious! It wasn't too sweet like some reviews stated, and I also didn't have an issue with butter pooling up on top around the sugar mixture like others did. I will definitly share this with friends and make again just as it is.

Sweet, Sticky and Spicy Chicken

Reviewed: Sep. 23, 2012
This was pretty easy to make. I took the suggestion of other reviewers and dredged the chicken in flour before cooking and it came out perfect. I was a little disapointed in the flavor though. It had a little sweetness but I mainly tasted saltiness and soy sauce with an afterkick of the sriracha hot sauce I used. Not sure if I will make again.

Chef John's Sausage & Shrimp Jambalaya

Reviewed: Sep. 16, 2012
This was an easy recipe for me to make (I am not a cook by any means) and I thought it tasted great. The only reason I gave it 4 instead of 5 stars is because I think next time I will have to cut the heat down just a tad. I got quite the burn on the tongue, lol.

Oatmeal Raisin Cookies VI

Reviewed: Aug. 12, 2012
I was craving oatmeal raisin cookies and decided on this recipe. I am so happy! This is the first time I have ever made cookies from scratch and they came out PERFECT. 10 minutes in the oven and they had a lightly chewie dark golden brown edge and a nice softly chewie middle. Just the right amount of sweetness and spice, loved it! My neighbors tried them and now they want the recipe :)
