About this Cook
I really like to cook ~ I figure if I have to do it anyway ~ make it fun! I'm a huge OU fan! Football season is finally here!! Boomer Sooner :) I love God, my family and I enjoy photography, watching my daughter play HS soccer and scrapbooking. I am addicted to Pinterest and all recipes ~ I'm learning so much and people have the best ideas on these sites.
My favorite things to cook
There is not much I don't like to cook! :) I do like to make mini swiss cheese quiches or any baked goods ~ It's relaxing for me to clean off the counter top and put on music and zone out into my recipe!! I'm not a morning person, so make ahead breakfasts are my favorites! I'm learning how to use my slowcooker and I love grilling! Pizzas on the grill ROCK!! :) I love Mexican food ~ enchiladas or fajitas, casseroles. I like Southern cooking ~ I'm so hooked on Paula Deen! I just want to make gumbo and cornbread every time I watch her show! :)
My favorite family cooking traditions
The birthday dinners are always fun - my daughter loves chicken alfredo with mushrooms and broccoli on the side and tons of really rich sauce. My son prefers mounds of ribs or other "manly" meat to feast on. They love homemade birthday cakes and I've taken a class, but I'm no pastry chef - they do taste good and look decent...although northwest Arkansas has some fabulous bakeries I'm happy to give business to on special occasions :)
My cooking triumphs
I've made a 3 layer Italian Cream cake that took half a day to make ~ SO worth it! :) It even looked pretty! Ribs slow cooked in the oven are my new favorite thing to make ~ I would like to get a smoker for the back porch someday, I think a smoked turkey would be wonderful :)
My cooking tragedies
oh my goodness...too many to list, but I've learned from them all - bacon was the one thing I use to ruin every time. I now cook it in the oven instead of the skillet, and my family is grateful ;)

Easy Meatloaf
My husband LOVED this, the kids wished I'd left out the onions :) I cooked it a few minutes more and the top sauce was very nice! Better than a plain ketchup.
