Country Green Beans

I omitted the ham, and these turned out perfectly! Everyone in the family really enjoyed them, and they were easy to make - one less thing to have to watch over while you're cooking dinner.

Breaded, Fried, Softly Spiced Tofu

Delicious! The instructions are for 1/2 by 1/2 inch sticks, but the pictures show cubes, and I think that would work better for dipping. I rarely fry food, so I wasn't sure what heat to use, but I tried high and it worked fine. Just be careful if you do multiple batches not to let the burnt breading that stays in the pan get on your fresh sticks! This will definitely be a new tofu standby for me.

Garlic Broccoli

Ok. A little too sweet, and I would like it to have a more fluid texture to evenly coat the broccoli. So, less sugar, more water/sauce.

Fine, but even with twice the cumin seeds the flavor was too mild. I would add cumin powder in addition and I'll try some of the other additions the author suggested.

Peppy's Pita Bread

I would make these larger than suggested - maybe make six instead of eight. They don't seem to puff evenly - make sure you put them centered in the oven. The moist towel is key to the texture. Otherwise, quite tasty, great with tzatziki.

Blitz Puff Pastry

Beautiful recipe. I rolled it out a total of four times, and it puffed up perfectly for both a galette and some palmiers. I will certainly use this shortcut method again - making the real stuff is just too much! The recipe is right - the dough looks terrible during the first roll but it comes together very well by the second or third rolling. Thanks!

Indian Naan II

Great. I used oil instead of ghee and just some garlic powder. I think it should say on the grill? Anyhow, I cooked them on my griddle at 450 degrees and it took about 4 minutes per side but they came out quite nice. They don't reheat well.

Rosy's Palak Paneer

This was really delicious. Due to the comments of others, I reduced the tomato by half and I found that proportion tasty. I used about 2 cups of ricotta in place of the paneer - it was very creamy but delicious. I also didn't find I needed to simmer the tomato sauce for an hour - I did just about hald an hour.

Asparagus Swiss Quiche

This quiche is great! I used mozzarella instead of swiss for a less potent flavor and I didn't use any bacon. Use plenty of asparagus, and let it cool before mixing with the cheese - it will melt and prohibit it from even distribution. I froze one after baking and it was great reheated a week later!

Sour Cream Gooseberry Pie

If you like a tart pie, this is a good gooseberry pie. I used two cups of berries, but that wasn't enough. I might mash some of them to better distribute the tartness and use a little less sour cream. Anyway, this pie was pretty tasty but you have to like a very tart pie!

Rhubarb Strawberry Crunch

I don't see that anyone else had this issue, but the amount of crumb topping was insufficient for this dessert. I might use the same proportions but cook it in an 8*8 to increase the fruit to topping ratio. I also added a tbsp. of lemon juice to the fruit. Perhaps using 4 cups strawberry, 2 cups rhubarb would be better.

Banana Bread Cookies

If you want a cookie that tastes exactly like banana bread, then these are the cookies for you. The texture is a little off, but they're tasty. Add some chopped walnuts or shredded coconut for a bit of pizazz.

Tofu Parmigiana

This came out ok, but the recipe wasn't great. It required at least 3 times the bread crumbs and just relying on water to get them to stick was not sufficient. The flavors weren't very interesting. I would have given it three stars, but the diners were split - some thought it was very tasty.
