The Best Thai Peanut Sauce

I'm not an expert on Thai food but I thought this sauce was great with Chicken Satay and later stirred into noodles. I did start with only 1 cup of peanut butter, but I stayed with 1/2 cup of coconut milk. I did use 3 tablespoons of water as directed, if you want a thinner sauce I would add more water, coconut milk is too thick to thin the sauce. I didn't have fish sauce so I used extra soy sauce. Also I used Thai Chili Sauce (a sweet and spicy, syrupy kind of sauce) in place of the hot sauce (I used about 3 tablespoons). Everything else I did as directed...makes a bunch though, unless you plan on using it for several things you might want to only make half!!

Thai Chicken Satay

I'm not a Thai expert but I think this recipe turned out great. I only made a couple of modifications...I used soy sauce in place of the fish sauce as it's not something I keep around. I also didn't have chili oil so I used a pinch of red pepper flakes. I used chicken tenders and didn't skewer them...mine marinated for about 2 days (I trim meat and put it in marinade when I get home from the store and then freeze or refrigerate). I cooked my under the broiler for about 4 minutes per side. Very moist and tender and full of flavor. I didn't use the garnishes but there is cilantro in the peanut sauce I made. Ground Turkey Casserole

I used the recipe as a base and made several additions to our family's tastes. In addition to the ingredients listed I added 1 diced onion, 3 cloves garlic, basil and oregano to meat when browning. I added an undrained can of italian stewed tomatoes and a pinch of red pepper flakes. I mixed the noodles with the meat sauce. To the cheese mixture I added 1 clove garlic, parsley, minced green onions, pepper and a handful of grated parmesan. I layered the pasta/sauce on bottom and spread the cheese mixture over the top. I then topped with mozzarella, provolone and additional parmesan to continue the italian theme. A creamy, hearty dish. Rich and filling. My entire family loved it including my 3 year old twins and 1 year old. Made enough for our family of 5 with leftovers.

Braised Balsamic Chicken

I think this recipe is perfect just as it is written. It is full flavored and because it is balsamic chicken make sure you use good balsamic vinegar!

Caribbean Turkey Burgers

This is an awesome, flavorful and moist burger! I did make a couple of changes...I used fresh breadcrumbs instead of dry, I used cilantro in place of the parsley, I added a bit of olive oil to the meat mixture and I used 2 tablespoons of Jerk Seasoning (I use Pampered Chef Jamaican Jerk Seasoning). These are great served on a bun with sliced mango and red onion or as patties topped with avacado mango salsa!!

Avocado Mango Salsa

This is AMAZING!! I used jalapeno instead of the habanero for a little less spice. I served it with Caribbean Turkey Burgers...also great over any jerk seasoned meat. Thanks for the great recipe!
